Crossing Between the Continents

In stanbul, you can climb aboard a commuter ferry () and flit between Europe and Asia in less than an hour. Every day, a flotilla of boats take locals up the Bosphorus and over the Sea of Marmara, sounding their sonorous horns as they go. Morning services share the waterways with diminutive fishing boats and massive container ships, all accompanied by flocks of wildly shrieking seagulls. At sunset, the tapering minarets and Byzantine domes of the Old City are thrown into relief against a dusky pink sky its the citys most magical sight.

The hard-set honeycomb landscape looks sculpted by a swarm of genius bees. The truth the cooling effects of a major volcanic eruption is only slightly less cool. Humans have also left their mark here in the frescoes of colourful Byzantine churches or in the bowels of complex underground cities. These days, Cappadocia () is all about good times; fine wine, fine food and five-star caves; trail rides, valley hikes and hot-air ballooning. Theres enough to keep you buzzing for days.

Ephesus

Undoubtedly the most famous of Turkeys ancient sites and considered the best-preserved ruins in the Mediterranean, Ephesus () is a powerful tribute to Greek artistry and Roman architectural prowess. A stroll along the marble-coated Curetes Way provides myriad photo opportunities, but the true pice de rsistance is the Terraced Houses complex, offering incredible insight into the daily lives of the citys elite through vivid frescoes and sophisticated mosaics.

Lycian Way

Acclaimed as one of the top 10 long-distance walks in the world, the Lycian Way () follows well-laid and signposted paths for 500km between Fethiye and Antalya. This is the Teke peninsula, birthplace of the ancient (and mysterious) Lycian civilisation. The route leads through pine and cedar forests in the shadow of mountains rising almost 3000m, and past villages, stunning coastal views and an embarrassment of ruins at such ancient cities as Pnara, Xanthos, Leton and Olympos. Walk it in sections unless you have a lot of time and stamina.

Kebaps

Just about anything you can poke a i (skewer) at will be an essential component of some Turkish towns proprietary kebap. Theyre made with cubed meat, minced meat, aubergine (eggplant), plums and chestnuts. But the most famous regional variation the Adana kebap keeps it nice and simple: minced beef or lamb is mixed with powered red pepper, grilled on a skewer and served with sliced onions dusted with sumac (a slightly acidic local herb) and barbecued tomatoes. Afiyet olsun (bon apptit)!

History resonates when you stand in this garden between the Blue Mosque (). Edifices built for the glorification of God and powerful men not necessarily in that order these two buildings remind beholders of the citys Byzantine and Ottoman heritage. Book-ended by the Roman-era Hippodrome and a modern-day tourist enclave where remnants of the Great Palace of Byzantium provide decorative flourishes, the park offers more than peerless photo opportunities it visually reinforces stanbuls claim to be the greatest city in the world.

Sumela Monastery

The improbable cliff-face location of the Sumela Monastery () is more than matched by the surrounding verdant scenery. Gently winding roads leading to the monastery twist past rustic riverside fish restaurants, and the progress of travellers is often pleasantly hindered by flocks of fat-tailed sheep being guided to fresh pastures. The last few kilometres afford a couple of tantalising glimpses across pine-covered valleys to Sumelas honey-coloured walls, and the final approach by foot is best accompanied by a soundtrack from local musicians.

Hamams (Turkish Baths)

At most of the traditional hamams in Turkey all the extras are on offer: bath treatments, facials, pedicures and so on. But we recommend you stick with the tried and true a soak and a scrub followed by an elective pummelling. The world (and your body) will never feel quite the same again. For a truly atmospheric experience, seek out a soak in a centuries-old hamam in Antalyas atmospheric old quarter or in historic Sultanahmet, stanbul.

Patara () boasts Turkeys longest sand beach, a chunk of the Lycian Way long-distance footpath, and has some of the most extensive ruins in the region. The Mediterranean town was also the principal port for ancient Lycia. Still not convinced? St Nicholas (better known as Santa Claus) was born here in the 4th century, and saints Paul and Luke changed boats here while on their third mission from Rhodes to Phoenicia. Or so it says in Acts 21:1-2.

Practising Your Turkish

Getting a grasp on basic Turkish is pretty straightforward as most sounds are similar to those made by speakers of English. Kick off your fledgling Turkish vocabulary by ordering from menus featuring lots of tasty regional variations. In restaurants, tea shops and bus stations, always take the time to accept heartfelt invitations to chat over a glass of ay. Remember that travel is not a race, and those leisurely times you spend trying to converse with the immensely welcoming locals will emerge as highlights of your trip.
