Cook wild rice and quinoa according to package directions. 2. Clean and quarter mushrooms. Over medium heat saut mushrooms in olive oil until they turnreddish brown with golden spots, about 10 minutes. 3. Cut sweet potatoes into bite-size pieces.

Place in baking pan and coat potatoes lightlywith olive oil. Roast in oven set at 375F for about 25minutes, or until done. 4. Wash kale and remove kale stems. Chop and then steam until tender. 5.

Recipe 2Vegetable Chili 1 tablespoon olive oil 2 medium carrots, in -inch pieces 2 medium parsnips, in -inch pieces 1 medium onion, chopped 2 cans (15-ounces each) red kidney beans, drained 4 teaspoons chili powder 1 can (28-ounce) whole tomatoes in juice cup fresh cilantro leaves, chopped In saucepot, heat olive oil onmedium-high. Add carrots, parsnips,chopped onion, and cook 6 to 8 minutes or until all vegetables are tender andbeginning to brown, stirring occasionally. Meanwhile, on large plate, mash 1cup drained beans.

Stir chili powder into vegetables in saucepot; cook 1minute, stirring. Add canned tomatoeswith their juice, whole and mashed beans, and 2 cups water. Heat to boiling on high, breaking up tomatoes with spoon . Reduce heat to medium and cook, uncovered for10 minutes, stirring occasionally. Recipe 3Hearty Lentil Stew cup chopped onion 2 garlic cloves, minced 1 tablespoon vegetable oil 1 cup lentils, rinsed 4 tsp vegetable or chicken bouillon granules 3 tsp Worcestershire sauce 1 bay leaf 1 cup chopped carrots 14.5-ounce can diced tomatoes withliquid 10-oz package frozen choppedspinach, thawed 1 Tbsp red wine vinegar In a large saucepan, saut onionand garlic in oil until tender. Add 5cups of water, lentils, bouillon, Worcestershire sauce, teaspoon salt, teaspoon black pepperand the bay leaf. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add the carrots, tomatoes andspinach; return to a boil.

Reduce heat; cover and simmer additional 15 to 20 minutes,or until lentils are tender. Stir in vinegar and serve. Black-Eyed Peas over Rice
2 cups fat-free vegetable broth 2 cups water teaspoon kosher salt teaspoon freshly ground black pepper 1-pound bag frozen black-eyedpeas, thawed 12-ounce bunch fresh turnipgreens, trimmed and coarsely chopped 2 tablespoons pepper vinegar Cook bacon in a Dutch oven overmedium heat until crisp.

Remove baconfrom pan using a slotted spoon, reserving drippings in pan. Crumble bacon. Add onion to drippings in pan;saut 4 minutes, stirring occasionally. Stir in broth and the next 5 ingredients (through greens); bring to aboil. Reduce heat, and simmer for aboutan hour or until peas are tender, stirring occasionally and skimming asnecessary. Stir in vinegar.

Ladle about 1 cups pea mixture intoeach of 4 bowls and top evenly with crumbled bacon. Polenta-Stuffed Peppers
plum tomatoes, halved red onion, cut into wedges tablespoon olive oil poblano peppers, halved lengthwise teaspoon ground cinnamon cup polenta 10-ounce package frozen corn cup soft goat cheese (2 ounces) scallions, sliced 1. Heat broiler.On a rimmed baking sheet, toss the tomatoes, onion, and oil. Turn tomatoescut-side down.

Add the peppers, cut-side down. Broil until tender and charred, stirring the onions and turning tomatoesand peppers halfway through, 5 to 8 minutes. 2. Heat oven to400 F. In a food processor, puree tomatoes, onion, cinnamon, teaspoon salt,and teaspoon pepper until smooth. Spread half the sauce in a 9-by-13-inchbaking dish.
