Change is afoot in the world of the professional kitchen. Every day more and more people are realizing that the quality of what we put in our bodies directly impacts our sense of balance, our health, our happiness, and our overall well-being. A few simple changes to how we eat, a little consideration for our ingredients, and we see great changes in how we feel. A considerate approach to how we eat is helping countless people reclaim their health. Its worked for meIve recovered from a so-called incurable autoimmune disease and I attribute the lions share of my recovery to the foods that I eat.
No chef I know is nearly as passionate as Pete Evans when it comes to eating for health and happiness and making sure not to forget the pleasure. This important book closes the door, once and for all, on the stigma of healthy food not being delicious food. In Petes kitchen, eating for nourishment is pleasurable and passionate and full of love. As weve strayed farther from the foods we ate in the recent past, weve begun to pay the price with longer, sicker lives. I love food! I love the effortless way it brings people together, its ability to create treasured memories, and, most of all, the way it provides the foundation for a vibrant, enlightened, and nourished life. I am a chef with a solid twenty-five years of experience under my apron. Because Ive put in some seriously long hours in professional kitchens, Ive enjoyed great success creating numerous restaurants and cooking over a million meals with my team. But I didnt want the kitchen to be my only office, so fifteen years ago, I leaped into the extraordinary world of television and cookbooks, forging a career that enables me to share my culinary passions with the world.
Ive always drawn inspiration from studying and cooking foods from cultures around the globe, and not long ago, I stumbled across what many consider the oldest approach to cooking. This exciting, wholesomely traditional, affordable, attainable, and nutritionally dense way of enjoying food appealed to both my intellect and my taste buds and resonated with me more than any other dietary regimen I have ever encountered. Since then, it has guided my life and my familys lives in the most incredible, new direction, and it has opened our hearts, minds, and mouths to a wonderful lifestyle. That cooking styleyou guessed itis Paleo!
Not one to do things by halves, I threw myself into thoroughly researching the Paleo way of lifewhich omits refined sugars, legumes, grains, and most dairy from the daily dietand then adopting it with vigor. As both a longtime chef and a certified health coach, I feel that I am well equipped to speak on nutrition and diet, so my journey is now directed toward sharing my experiences and knowledge with others.
I realize that nowadays everybody is busy. I know that because Im one of those busy people. That means that I must make it as easy as possible for you to become as healthy, strong, and happy as you can without spending loads of time, effort, or money to get there. I also know that once you start making these changes, the difference in the way you feel will inspire you to go all the way and make the Paleo lifestyle a permanent part of your life.
From the very start, I want the Paleo approach to be a totally positive experience for you. In other words, it has to be a party, not a chore. You need to see it as packed with gifts and rewards, not as weird or deprived. Toward that end, lets begin with ten things you need to know about Paleo, to help you fully understand the concept.
1. The cave is optional.
There is no need to be put off by the terms Paleolithic, primal, caveman, or Stone Age. Although many of the principles of this way of eating and living come from our hunter-gatherer ancestors, the approach I have taken is backed up by respected contemporary scientific research, common sense, and what has worked for me. (A great book to read for more information is Nora Gedgaudass Primal Body, Primal Mind .) The thing is, the Paleo lifestyle is not something that someone came up with recently. It takes ideas about what made our ancestors healthy and strong survivors and adapts them to twenty-first-century life. I prefer to call what I do Paleo because thats how it was introduced to me, but you can call it what you like. The name is not important, but the next nine points are.
