The recipes you are about to explore are not of Christmas banquets. I will leave those in the rightful hands of your personal family recipes passed down from one generation to the next and to the glamorous celebrity chefs who do it best. These recipes are to help gluten free folk (and those catering for them) navigate social situations of the entire festive season; breakfast, light meals, nibbles, sweets and festive drinks.
As the festive period can be detrimental to most of our waistlines, all of these recipes are gluten, grain and refined sugar free. Many of them are free from dairy and nuts. Posh Omelette Serves One Hassle free omelette for fuss free family brunches! Ingredients 2 eggs Dash of milk 3 asparagus spears, chopped 1 tablespoon finely diced red onion 40 grams diced feta 1/4 cup roasted pumpkin pieces S&P Chopped parsley leaves to garnish Method Whisk the two eggs with a dash of milk, S&P. Place a small frying pan on medium heat and pour the milk mixture into it. As the egg mixture starts to set, add the asparagus, red onion, feta and pumpkin pieces. Using a spatula, gently fold the omelette over in half and continue to cook for a few moments. Flip the omelette to ensure it is cooked evenly before serving. Garnish with chopped parsley.
Grain Free Cinnamon Pancakes with Cherry Compote. Serves Two I love pancakes and have done since a young age. My mum will happily tell you a frightfully embarrassing story of eight year old me devouring a large stack of blueberry pancakes in its entirety while on holiday and had the attention of the L.A.P.D officers who were enjoying their morning coffee and doughnuts in that particular diner. I clearly have always been a glutton for pancake goodness. From this batch youll get 6-8 smallish pancakes. Ingredients Pancake batter 2 eggs 1 banana 1/2 teaspoon baking powder 2 tablespoons almond meal 1/4 teaspoon of cinnamon 2 tablespoons of milk Spray oil (I use coconut oil) Cherry Compote 1/2 cup pitted cherries (fresh or thawed) 2 teaspoons organic golden rice malt syrup 1/2 teaspoon vanilla extract 1/2 teaspoon mixed spice Method Blitz all the pancake ingredients until a smooth batter forms.
Heat a small frying pan over a low- medium heat. Spray the pan lightly with oil and pour some batter in. Flip the pancakes when small bubbles begin to form in the centre of them. Flip the pancakes and cook both sides until golden. In a small saucepan, combine all of the compote ingredients over a low- medium heat. Continue to stir until the ingredients are combined.
The compote will thicken in a matter of minutes. Keep stirring the compote to avoid burning. When the compote begins to bubble at the edges and is sticky and shiny, it is ready. Serve pancakes drizzled with the cherry compote. Fructose Free Granola I have been making variations of this recipe for a few years. I never like going to someones house, during the festive season, empty handed.
I think homemade gifts are wonderful and thoughtful. This granola is great to give to a loved one, in a jar with a sweet little bow or as part of a festive hamper. Ingredients 1/3 cup organic raw almonds 1/4 cup slivered almonds 1/3 cup pecans 1/4 cup brazil nuts 1/4 cup organic desiccated coconut 60ml organic golden rice malt syrup 3 tablespoons organic extra virgin coconut oil, melted 2 teaspoons ground cinnamon 1 teaspoon organic maca powder 1 tablespoon organic chia seeds 1 teaspoon vanilla extract Method Gently blitz all the nuts except the slivered almonds for a few seconds until rubble-like in texture. Pour into a bowl and stir in the slivered almonds, coconut, rice malt syrup, coconut oil, cinnamon, maca, chia seeds and vanilla extract. Pour granola mix onto a lined baking tray and ensure it is spread out in an even layer. Using a pastry brush, gently pat some more melted coconut oil over the granola.
Place on the middle rack of the oven and bake for 5 minutes. After 5 minutes, remove from the oven and toss the granola about, spread it out in an even layer and gently pat some more melted coconut oil over it. Return to the oven for a further 5 minutes. Remove from the oven and allow to cool on the baking tray. Great served with natural yoghurt. Overindulged Recovery Smoothie Serves Two The festive season often sees the most disciplined individuals indulge their human side and subsequently overindulge.
I am a firm believer that starting the day with the right body fuel choices is key to staying on the straight and narrow. But what happens when you are still full from the previous day, if youve let your shiny halo slip? You dont have to start the day where you left off yesterday. This smoothie combination helps rehydrate the body and gives the digestive system a much needed rest. The ginger and mint soothes the body and mind by calming inflammation and digestion. They both have properties known to reduce headaches and nausea while alleviating mental stress (just what we need in the festive season).
