23 cucumbers1 ounce Ducktrap River smokedsalmon8 ounces Neufchtel cheese, roomtemperaturetablespoon lemon juiceteaspoon freshly ground pepperDried dill (optional) Cut the cucumbers into slices about -inch thick. Place the slices on paper towels to drain while you prepare the salmon cream. Combine the smoked salmon, Neufchtel cheese, lemon juice, and pepper in a food processor; blend until smooth. Fit a pastry bag with your choice of tip; spoon the salmon cream into the bag.
Pipe 1 teaspoon of the salmon cream atop each cucumber slice. Garnish with dried dill, if desired.
