ACKNOWLEDGMENTS

There are few communities as generous as the bar community, and I owe thanks to hundreds of bartenders who have shared their insights and recipes with me over the years. I am so grateful to every bartender in this book: Kaitlyn Stewart, Sarah Rosner, Tommy Quimby, Bethany Kocak, Matthew McKinley Campbell, Arnaud Dissais, Julia Momose, Michael Neff, Shannon Tebay Sidle, Chris Morris, Kristina Magro, Tom Lindstedt, Brian Griffiths, Kate Bolton, Frank Cisneros, Collin Nicholas, Elsa Taylor, Christopher Longoria, Keli Rivers, Andrew Moore, Sother Teague, Karen Fu, Laura Newman, Ben Potts, Heather Sang, Benjamin Amberg, T. It was a dream to work with photographer extraordinaire Kelly Puleio and her entire team: producer Tamara Costa, stylist Maxwell Smith, bartenders Brian Barnett and Christina Cabrera, and assistants Nicola Parisi and Keri Mendona.

I had no idea that this book would come to be when I sat down to share a massive cocktail in a pineapple with Emily Timberlake, but Im so glad we ordered that pia colada. And thanks to the rest of the Ten Speed crew, including Ashley Lima, Hope Meng, David Hawk, and Jane Chinn. Thank you to my agent, Alison Fargis, for making it all happen, and fast.

Thanks to my parents and my in-laws for encouraging me to make the leap, and to Charlotte Towery, Bridget Veltri, and Eva Blehm, who tirelessly took Minna to visit the duck and the bunny while I tested recipes. Thanks to testers Emma Christensen, Mike Reis, Lauren Duffy Lastowka, Sasha Shusteff, Joe Ruvel, Kristen Sahler, and everyone else who gave these drinks a try.

My deepest gratitude to Ed Levine and the amazing folks of Serious Eats, past and present. I owe you an umbrella drink one of these days.

And to Matt, thank you for your humor, your patience, your enthusiasm, your calm presence, and your brilliant mind. In the end, its not the drinks that make the cocktail hour great.

MAGGIE HOFFMAN writes about cocktails, wine, and beer for the James Beard Awardwinning website Serious Eats, where she founded the drinks section in 2011 and served as managing editor. Hoffman has written for Wine Enthusiast, the San Francisco Chronicle, and San Francisco Magazine, as well as the websites of Saveur, Food & Wine, and others. She lives in San Francisco with her husband, daughter, and more than a few bottles of booze.

MAKES 1 DRINK

I find that floral liqueurs always sit gathering dust in my liquor cabinet, and I usually prefer the flavors of fresh herbs and floral teas, anyway. Theres no need to shell out for another expensive bottle when you have access to aromatic jasmine green tea and citrusy lemongrass. This smooth sour from Kaitlyn Stewart of Royal Dinette in Vancouver, British Columbia, brings them together with vodka to let the delicate flavors shine; salt and honey give the drink a round, full texture. For a strong brew, let the tea steep for about four minutes. Its robust flavor and touch of bitterness help to balance the drink.
