Introduction
These days it seems like everyone is trying to tighten their beltsfinancially and literally. The problem is that too many of us fall into the weight loss marketing trap: paying lots of cash for processed, packaged diet food thats loaded with junk, from artificial colors and flavors to nasty preservatives. Crash diets, starvation, and fake food (yes, thats fake food, as in made in a science lab!) loaded with fillers and chemicals arent the solution to looking fabulous forever. In fact, oftentimes were making ourselves sick (and broke!) from chemicals and additives when were trying to make ourselves healthier! And whats sadder than eating dinner out of a microwave tray? I want fresh, seasonal foods that are beautiful on the plateand that Ive chosen myself.
So I came up with an easy philosophy for eating well thats healthy lean, and budget friendly. Instead of filling up on things I know I shouldnt be eating, like processed foods, empty carbs, and unwanted sat fats, I pack my menus with what I call FWBsFoods with Benefits. I dont deny myself anything (check out the dessert chapter if you have any doubts on that score), but by building every meal around my fave FWBs, the good stuff naturally takes center stage, while the stuff that should be eaten in moderation gets pushed into the wings in a supporting role. The result is real food that doesnt cost an arm and a leg, is simple to prepare, and makes you gorgeous inside and out.
Cooking with FWBs is all about eating food to benefit your body. For example, quinoa is a seed that cooks up like couscous but delivers a heaping helping of essential amino acids (the building blocks of protein) and filling fiber. So why eat couscous when you can eat quinoa? While youre at it, how about swapping vitamins A- and C-packed oven-baked sweet potato fries for the greasy, fat-loaded fries you sneak every now and then?
The first step is simple. Just go to the store and make an investment in whole, natural, unprocessed foods. Organic is great if you can get it and yes, it IS worth the added expense for both your health and that of the planetand farmers markets have wonderfully fresh foods from local farms and producers. But even if you do all your food shopping at the local megamarket, just by chosing real, whole foods youll be that much closer to a more gorgeous, happier, and healthier you.
My new outlook on food began when I realized my approach to diet just wasnt working for me. You see, I was paid to have the perfect body because I was a fit model. That meant I had to maintain a 26-inch waist, 35-inch hips, and 20-inch thighs on the money, no ifs, ands, or butts about it. Most days I got through the day on an endless stream of Diet Coke and an occasional handful of nuts (okay, I sometimes splurged on a sugar-monster frappuccino!). But it always felt wrong to me, and by the time I was 23 (a dinosaur in the modeling world) I realized that kind of diet just wasnt getting the job done. Plus, I missed eating the kind of delicious, flavorful, REAL food Id grown up on.

I quickly learned that pinching pennies is as easy as pinching poundsit just takes a little planning and a lot of ingenuity. Ive loaded the book with tons of tips and ideas for stretching your budget without blowing your diet. One trick is to shop seasonally, as seasonal produce is most often less expensive than the stuff flown in from abroad or trucked cross-country. Another is to keep an eye out for sales on your favorite protein foodswhen the price is right, stock up and freeze for a later meal. Shopping generic for foods is a good practice too, as most often generic products are exactly the same as the brand name ones! Dont believe me? Just read the labels. And when you do read the labels, pay attention not only to calories, carbs, and fat grams, but to sodium as well. Once you see what youre really paying for youll realize that making food from scratch always beats processed and packagedfrom homemade barbecue sauce (page )whether youre looking out for your health or your wallet.
Cooking amazing, healthy food on a slim budget has never been tastier, and soon youll not only look and feel better than ever, but youll want to invite your friends over to share in the fabulousness. I dont know what Id do without my girlfriendsentertaining is a part of my life that I refuse to give up, even if I only have $10 to make dinner! Thats why Ive included tons of party-friendly, chic, and modern recipes that wont leave you in the poorhouse afterward.
My mom is Japanese and my dad is Polish-American, so our dinner table was always a crazy cultural mix. I dont know many people who count both miso soup and pierogis among their fave comfort foods! But it was all made with care, with the best ingredients we could afford, and it was always homemade. Throughout my childhood, my mom cooked dinner every night (shed often have to come and drag me in from the sandbox where Id be playing cooking show with old melamine dishes) and packed me the best brown-bag lunches my school had ever seen.
When I finally decided I couldnt deny my love of food any longer, I did a complete 180 and went to culinary school. I learned the basics in Le Cordon Bleu College of Culinary Arts in Los Angeles and found myself becoming passionate, studious, and serious about something other than surfing or Betsey Johnson for the first time in my life! My classmates loved to tease me about the fact that I traded my Manolos for chef clogs when I came through the kitchen (thats how I earned my nickname the Stiletto Chef). But even though peeling potatoes and carrots for $6 an hour was a far cry from earning $150 an hour for trying on jeans, I knew I had found my true calling.
I also had a rude awakening. After years of denial and dieting, I gained 10 pounds during my two terms of baking. With my tuition due and the realities of a chefs tiny starting salary staring me in the face, I knew I had to raise cash fast, which meant getting back into modeling (and my jeans!). I had to teach myself about balance and moderation and pronto.
Fortunately it didnt take me long to figure out how to trim a few fat grams and calories here and there while still eating great and keeping healthy and sexy once I really put my mind to it. I became the queen of swapping (not sacrificing), but always with flavor leading the way. Before long I had a collection of recipes that tasted great and were great for me too. Not bad for a surfer-girl-turned-model-turned-chef, right?
