Preface
I would like to say that Ive never met a meal I didnt remember, although there have been a few I wouldnt mind forgetting. After digesting and assimilating the many thousands of cuisine concoctions consumed, I have metabolized them into the nearly 1,000 pages you have before you. I hope youll like the flavor of this book. Please though, dont try to eat it all in one meal. Take your time, chew well, let it digest and assimilatethen youll be able to use it for energy and health now and beyond.
I am quite proud of Staying Healthy with Nutrition . It was a labor of love and loads of work that took many years with my original book team of Bethany Argisle and Neil Murray, plus the supportive folks at Celestial Arts, led at that time by David Hinds. David believed the world was ready for a large nutrition text with the alternative and progressive slant to include the wide use of nutritional supplements and detoxification. Well, he was right!
Staying Healthy with Nutrition has been well received and widely used by individuals, health and medical practitioners, and schools that teach nutrition. As an example, Clayton College for Natural Health, Bauman College, and many others have used this book as part of their basic nutrition courses in providing degrees and certifications in nutrition. Taking this into accountalong with the great changes, studies, and new knowledge in nutritional medicineit was imperative to create an updated edition of this tome with the latest in research.
