INTRODUCTION
Do We Eat to Live or Live to Eat?
The secret to healing ourselves is to tap into the inherent wisdom of the body. One of the best ways to do this is to manage what we put inside it.
Some years ago, one of this nations largest chemical corporations created an advertising campaign for the purpose of promoting a positive public image about manufactured chemicals. The slogan of the day was: Better Living Through Chemistry. Today, that same promotion would not work because so much of our governments time, taxpayer money and awareness is focused on the job of removing toxic chemicals that are harming our health and environment. Part of this chemical pollution involves food.
In the post World War II era, chemistry was seen as a way to improve our foodits shelf-life, appearance, taste and color. Ways were found to use chemicals on the farm to eliminate natural predators, speed growth and enlarge size. In the years since, we have come to accept as normal the presence of such chemicals as pesticides, preservatives, artificial colors and flavors, synthetic sweeteners and hormones in our food. In fact, it shocked us when, as a nation, we read the headlines telling us that DDT, saccharin and red dye #2 were threatening our health. Was it not their purpose to improve it, we asked? Why would it be allowed if it were not good? These and other questions were asked and a consumer revolution was launched to create responsibility among manufacturers and government to protect public health.
