When I started my gluten-free journey in 2010, I found it difficult to find recipes that were family friendly and easy to follow. Many of the recipes had expensive, hard-to-find ingredients and took a lot of time to cook, and honestly, my kids would not eat most of them.
So, I spent a lot of time in my kitchen testing different ingredients, trying to figure out how to modify our favorite meals to be gluten-free. Years later when I went dairy-free, I found it easy to substitute dairy-free alternatives in all of our favorite recipes. Eating gluten-free and dairy-free should not be very difficult or expensive, so I set out to fix that one recipe at a time. I have been able to modify classic recipeslike chocolate cake, so on your daughters birthday, she can enjoy great-tasting cake just like the other kids. Another favorite is my gluten-free and dairy-free dinner rolls, so your dad, who was just recently diagnosed with celiac disease, can have his favorite rolls with Thanksgiving dinner too. I included a recipe for gluten-free and dairy-free fluffy pancakes, so now your long-loved tradition of making pancakes on Sunday morning can continue even though your partner is now gluten and dairy intolerant. You can also whip up gluten-free and dairy-free chocolate chip cookies, so your son can have cookies at the elementary school cookie party just like everyone else.
I could go on and on. These stories, and so many more just like them, are the reasons that I share my recipes in this cookbook with you. All of these family favorites can be easily made gluten-free and dairy-free. Baking and cooking are some of my love languages, and I love sharing what I make for my family. I hope that sharing my journey may help you with yours.
