Foreword
I believe that cooking is a lot like jazz musicthere is plenty of room for improvisation, and while the result is usually good, it might be a little different every time. Unlike baking, where precise measurements are required, very few savory dishes have such strict demands, so you can have a little more creative fun while making your roasts, soups and other delicious and nutritious dishes.
Cookbooks might intimidate those who havent spent hours in the kitchen either watching grandma making a favorite Sunday chicken dish, or mom and dad throwing together nightly family meals. But this cookbook is meant to give you a different experience of cookingthe recipes are meant to be considered mainly as a guide. Feel free to be creative, inconsistent and improvisational whenever you feel like it. This means you can add more ingredients, switch some out, or change some entirely. The recipes are pretty adaptable, and isnt that what experimentation is about? So, follow your urges, play around with the recipes, and most of all have fun! Food always tastes better when there is enjoyment in its creation.
So, if youre a beginner at cooking and dont want to feel intimidated, or simply need someone to tell you to have more fun in the kitchen, this cookbook is for you. Make sure to read the page on cooking tipstried and true ideas that will always be your allies and help make each dish an even bigger success. And while youre doing your cookin jazz, put on some of your jazz favorites and groove! Youll feel even more creative and playful as you whip up that amazing dinner that everyone will swoon over.

About Cast Iron Dutch Ovens
Why Use Enamel Coated Cast Iron Cookware?
Unlike regular cast iron cookware, enamel-coated cast iron cookware is covered in a layer of enamel (or porcelain) and does not require seasoning. Enameled cast iron is therefore easier to clean and maintain than regular cast iron cookware. The enamel coating effectively creates a long-term, durable barrier, and is less prone to rust. Enameled cast iron has the added benefit of being non-reactive, which allows it to holdup to acidic foods (like tomatoes, or lemon juice) unlike seasoned cast iron pans.
Stovetop Cooking
Stovetop cooking is probably the most popular and common cooking method for enamel coated cast iron pans due to their unique browning capabilities. Enamel coated cast iron can be used on a variety of heat sources, including gas, electric, induction and ceramic or glass top stoves and ovens. A variety of foods other than meats can be cooked on the stovetop using enamel coated cast iron cookware.
Stovetop enamel coated cast iron cooking is ideal for anything from steaks to omelets to pancakes, which all benefit from the enamel coated cast iron pans non-stick surface. Similarly, enamel coated cast iron functions like a wok, which makes it perfect for all types of stir-fried dishes. The key to proper wok cooking is cooking the rice, meats and vegetables at a constant, medium heat. This allows the rice to retain a crispy texture, the vegetables to remain crunchy, and the meat to cook completely.
