  • 3 tablespoons avocado oil
  • teaspoon chili powder

  • teaspoon freshly ground black pepper
  • 1 (10-ounce) bag baby arugula
  • 1 navel orange, peeled and diced
  • 1 red grapefruit, peeled and cut into sections
  • 1 avocado, peeled, pitted, and cut into 1-inch pieces

Instructions:
In a medium saucepan, combine the quinoa and water and cook according to package directions.
Meanwhile, in a small bowl, whisk together the orange juice, lime juice, oil, chili powder, salt, and pepper.
