Cooking time: 15 minutes
Ingredients:
cup quinoa
1 cup water
cup orange juice
4 teaspoons freshly squeezed lime juice
3 tablespoons avocado oil
teaspoon chili powder
teaspoon salt (preferably pink Himalayan)
teaspoon freshly ground black pepper
1 (10-ounce) bag baby arugula
1 navel orange, peeled and diced
1 red grapefruit, peeled and cut into sections
1 avocado, peeled, pitted, and cut into 1-inch pieces
cup almond slices
Instructions:
In a medium saucepan, combine the quinoa and water and cook according to package directions.
Meanwhile, in a small bowl, whisk together the orange juice, lime juice, oil, chili powder, salt, and pepper.
On four plates, evenly divide the arugula, quinoa, orange, grapefruit, avocado, and almonds.
Drizzle with the dressing and serve immediately.
2. Hearty Vegetable Soup
This hearty vegetable soup is a hearty and wholesome meal that is both healthy and delicious. The vegetables in this soup provide you with vitamins, minerals, and antioxidants that contribute to better health. It makes a quick and easy dish for busy weeknights.

Cooking time: 20 minutes
Ingredients:
1 (26-ounce) carton or can diced tomatoes, undrained
1 (16-ounce) bag frozen mixed vegetables (green beans, corn, peas, and carrots)
3 cups vegetable broth, divided
Juice of 1 lemon
1 diced celery stalk
diced onion
cup chopped fresh parsley
2 teaspoons ground cumin
1 bay leaf
teaspoon black pepper, freshly ground
teaspoon salt
Instructions:
In a large saucepan, combine the tomatoes, vegetables, 2 cups of broth, lemon juice, celery, onion, parsley, cumin, salt, bay leaf, and pepper.
Cover and cook over high heat until the edges of the soup start to bubble.
Reduce the heat to medium-low, cover, and simmer for 20 minutes, or until all the vegetables are soft, adding more of the broth if a thinner soup is desired.
3. Greek Chicken Casserole
This Greek Chicken Casserole is a whole lot of flavors and textures in one delicious dish! The ingredients in this dish meld together to create a satisfying, modern take on the traditional casserole. This casserole has all the amazing flavors of Cypriot cuisine: olives, capers, and lemon peel. It's perfect for weeknights when you don't have time to cook!

4 skinless, boneless chicken breast halves or 8 tights
2 pounds potatoes, cubed
1 pound green beans, trimmed and cut in 1-inch pieces

1/4 cup water
cup crumbled feta cheese
salt and black pepper
