Dear Reader,
Since you have picked up this book, chances are you, or someone you love, is about to begin living gluten-free. In the beginning, the thought of eliminating bread and wheat can seem impossible. I wrote this book to help ease you through that transition. I promisethings will get easier.
I was diagnosed with celiac disease in 2008 after living with unexplained symptoms for more than fifteen years. Thankfully, doctors are beginning to realize that some seemingly random illnesses may be connected to the gluten in our diet, and are suggesting a gluten-free diet to their patients more frequently.
After being diagnosed with celiac disease, I knew that it would lead to a lifelong change in my diet. Rather than sulking over the foods I could no longer have, I decided that I would find a way to continue enjoying my favorite flavors by figuring out how to make them gluten-free. Dealing with well-meaning friends and family and attending social events were other challenges to overcome. These pages contain everything I have learned since beginning my gluten-free diet. My hope is that you will benefit from my experience as you begin living your gluten-free life.
