My bubble tea story is one of love at first drink. I drank my first bubble tea in 2009 and fell in love with it. So much so that I left my career to learn the art of bubble tea in Taiwan, with the hope of launching my own brand. I never could have imagined where this exciting journey would take me or how my trajectory would change.
After months of learning and preparation, Bubbleology was born in Soho, London, in April 2011. I wanted to share the experience Id had and the skills Id mastered in Taiwan. The journey so far has been exciting and unexpected, and I want to thank the Bubbleology team, everyone around the world who has helped to grow the trend of drinking bubble tea and our loyal customers, who have supported us along the way.
The joy of bubble tea comes from its unique taste, the variety of flavours, the texture of the pearls and its entirely customisable nature.
In light of the fast growth of the bubble tea industry, I believe that now is the time to demystify the process of making these drinks at home. This bubble tea bible has been created to inspire a new generation of consumers: it is for anyone and everyone, whether youre new to bubble tea, a long-time fan of the beverage or an experienced mixologist looking for ways to include tapioca pearls in your drinks.
The book looks at every stage of the bubble tea process, from making the tapioca to different tea bases, mixology techniques and flavour varieties. The recipes have been inspired by Bubbleologys own drinks menu, and include drinks for all occasions, ranging from simple to advanced recipes, as well as cocktails and mocktails.

BUBBLE TEA & ITS ORIGINS
Bubble tea is a refreshing tea-based beverage containing tapioca pearls. It is consumed using a fat straw, which is wide enough for the tapioca pearls to fit through. It comes in different flavours and a variety of tea bases can be used. There are both milk and fruit tea versions, and it can be consumed hot or cold, although it is traditionally served as a cold beverage.
This delicious drink originated in Taiwan in the early 1980s. Opinions differ about who first created bubble tea, but everyone can agree that, whoever it was, it was a genius creation.
Since its first humble incarnation as a plain tea base with tapioca pearls, bubble tea has been through an exciting evolution. It now has an extraordinary variety of flavours, as well as differing delicious and indulgent toppings.
About Bubbleology
Bubbleology was born in the heart of Soho in 2011 and has since expanded across the UK and internationally. There is a long history behind bubble tea, and it is important to us to recognise its Taiwanese heritage. We are proud to do our part in bringing greater awareness to this iconic drink.
However, Bubbleology is not a traditional Taiwanese bubble tea offering, and we have taken our own unique approach to this amazing beverage. Our intention has always been to create an alternative bubble tea experience, with exciting mixology approaches, unique dessert-drink fusions and even alcoholic bubble tea!
The recipes have been simplified to allow you to make bubble tea at home with ease. Certain ingredients have been amended to allow you to source them more easily, and are not the same as what would be used either in our stores or in Taiwan. Our aim here is clear: to simplify the experience of making bubble tea.
