- toasted almonds
- toasted coconut flakes
- blueberries
DIRECTIONS
  1. In a saucepan add almond milk, salt, cinnamon sticks and bring to a simmer for 15-18 minutes
  2. Remove from heat and let it stand for 5-6 minutes
  3. Scoop half of the quinoa into a bowl and serve with toppings

- 2 tsp baking powder
- tsp baking soda
- tsp salt
- 2 egg

  2. In another bowl mix remaining ingredients and and combine both mixtures

- cup apricots
- cup sunflower seeds
- cup sesame seeds
- 1 tablespoon agave nectar
- 1 egg

  1. Preheat the oven to 325 F
  2. In a bowl mix flour, soda and salt
  3. Stir in nuts, seeds, dried fruit, agave and egg
  4. Mix well until dough is formed and cut into 12-14 squares
  5. Place on a lined baking sheet and bake for 12-15 minutes
NUT BARS

- 1 cup unsweetened coconut
- 1 cup dried cranberries
- 1 cup unsalted cashews
- tsp salt
- 1 tablespoon honey

  1. In a blender add all ingredients except honey and cashews and blend until smooth
  2. When ready add cashews and honey and spoon mixture onto a wax paper

- 2 ripe avocados
- 3 oz. feta
- 2 tablespoons mint
- lemon
- 3 slices grain bread
DIRECTIONS
  1. Place avocado in a bowl and mash, add mint, lemon juice and mix well
  2. Season with black pepper, salt and toast bread whole wheat bread until golden
  3. Spoon of the avocado mixture onto each slice of bread
  4. Top with feta and serve
YOGURT PARFAIT

- cup unsalted cashews
- cup coconut water
- cup coconut meat
- 1 tsp vanilla
- drizzle of maple syrup
- 1 tablespoon blueberries
- 1 tablespoon gluten free granola
DIRECTIONS
  1. In a bowl soak cashew for 15-20 minutes
  2. Cut out the inner meat of the coconut
  3. Pour cashews, coconut meat, coconut water, vanilla and blend until smooth
  4. Pour into a bowl and top with blueberries and serve
