INGREDIENTS
- cup quinoa
- 1 cup almond milk
- 1 cinnamon sticks
- pinch of salt
- toasted almonds
- toasted coconut flakes
- blueberries
DIRECTIONS
- In a saucepan add almond milk, salt, cinnamon sticks and bring to a simmer for 15-18 minutes
- Remove from heat and let it stand for 5-6 minutes
- Scoop half of the quinoa into a bowl and serve with toppings

INGREDIENTS
- 2 cups flour
- 2 tsp baking powder
- tsp baking soda
- tsp salt
- 2 egg
- 2 cups vanilla soy yogurt
- 1 tablespoons coconut oil
DIRECTIONS
- In a bowl mix all dry ingredients together and let the mixture sit for a couple of minutes
- In another bowl mix remaining ingredients and and combine both mixtures
- Cook on preheated griddle and serve with sauted apples and maple syrup

INGREDIENTS
- cup orange juice
- 1 tsp matcha
- 1 tsp water
- cup strawberries
- cup blueberries
- banana
DIRECTIONS
- In a bowl matcha, water, strawberries and banana
- In a blender all add ingredients and blend until smooth
- Pour into a glass and serve
GLUTEN FREE MUESLI SCONE

INGREDIENTS
- 2 cups almond flour
- tsp salt
- tsp baking soda
- cup dried cranberries
- cup apricots
- cup sunflower seeds
- cup sesame seeds
- 1 tablespoon agave nectar
- 1 egg
DIRECTIONS
- Preheat the oven to 325 F
- In a bowl mix flour, soda and salt
- Stir in nuts, seeds, dried fruit, agave and egg
- Mix well until dough is formed and cut into 12-14 squares
- Place on a lined baking sheet and bake for 12-15 minutes

INGREDIENTS
- 1 cup unsweetened coconut
- 1 cup dried cranberries
- 1 cup unsalted cashews
- tsp salt
- 1 tablespoon honey
- 1 tablespoon coconut oil
- tsp cinnamon
DIRECTIONS
- In a blender add all ingredients except honey and cashews and blend until smooth
- When ready add cashews and honey and spoon mixture onto a wax paper
- Refrigerate for 2-3 hours, cut into bars and serve
AVOCADO TOAST

INGREDIENTS
- 2 ripe avocados
- 3 oz. feta
- 2 tablespoons mint
- lemon
- 3 slices grain bread
DIRECTIONS
- Place avocado in a bowl and mash, add mint, lemon juice and mix well
- Season with black pepper, salt and toast bread whole wheat bread until golden
- Spoon of the avocado mixture onto each slice of bread
- Top with feta and serve
YOGURT PARFAIT

INGREDIENTS
- cup unsalted cashews
- cup coconut water
- cup coconut meat
- 1 tsp vanilla
- drizzle of maple syrup
- 1 tablespoon blueberries
- 1 tablespoon gluten free granola
DIRECTIONS
- In a bowl soak cashew for 15-20 minutes
- Cut out the inner meat of the coconut
- Pour cashews, coconut meat, coconut water, vanilla and blend until smooth
- Pour into a bowl and top with blueberries and serve
