Blackberry-Lemonade Icebox Pie with Brown Butter Graham Crust
This is a wonderful pie recipe. The brown butter flavoring of the graham crust is heavenly with the blackberries, and the lemon juice makes it pop. You will love this pie!
Servings: 1 (9-inch pie)
Preparation Time: 1 hour and 20 minutes
Ingredients:
For the browned-butter graham crust
For the blackberry-lemonade filling
c. freshly squeezed lemon juice (172g)
c. fresh blackberries (76g)
2 (14 oz.) cans sweetened condensed milk
Grated zest of 1 lemon
c. sour cream (57g)
Instructions:
To make the browned-butter graham crust
In a small saucepan, heat the butter over medium heat until the butter has melted fully. Cook the butter and wait until the caramelization of milk solids and the butter became foamy. It will smell nutty. Remove from the heat. In a large bowl, combine the graham cracker crumbs, sugar, and salt, then pour in the butter. Mix with a spatula to combine. Lightly spray a deep-dish pie plate with nonstick baking spray. Pour the graham cracker mixture into the pie plate. Press the crumbs down firmly in the bottom and up the sides to create the crust. Chill the crust in the refrigerator while preparing the filling.
To make the blackberry-lemonade filling
Preheat the oven to 350F. In a blender, combine the lemon juice and blackberries and blend them well. In a medium bowl, combine the sweetened condensed milk, lemon zest, sour cream, and blended juice. Whisk until smooth. Pour the filling into the chilled crust and bake for 6 minutes. Chill in the refrigerator for 1 hour before serving.
Tangerine and Olive Oil Pie with Toasted Almonds
If you like tangerine and olive oil, this pie is for you. It has a mixture of both in it, plus toasted almonds. Yummy!

Preparation Time: 5 hours & 35 minutes
Ingredients:
Single batch Cornmeal Crust
c. sliced almonds
1 tbsp. cold water
1 tsp. gelatin powder
c. freshly squeezed tangerine juice (120g)
c. sugar
3 eggs
2 tbsp. freshly squeezed lemon juice (28g)
