A Brief History of Meat Pies
Savory meat pies date back as far as 9500 BC, but they are perhaps most recognized by their popularity in medieval times. Savory fillings for meat pies have come a long way since their consumption during the Middle-Ages, however, when magpie was the most frequent source of protein!
It wasnt until 1440 that the pastry of savory pies was perfected by the French and Italians, but even with a delicious crust, it took a while for savory pies to catch on worldwide. As they spread in popularity, various cultures added their own touch to meat pie fillings creating a range of localized recipes.
Part of the popularity of meat pies throughout history is due to their portability as well as their ability to keep foods preserved under thick crusts. When they were taken to the Americas by the British, savory pies took a while to catch on, not becoming popular until the 1800s. Even once accepted in the Americas, savory pies were soon overthrown for the more preferred sweet pies.
Despite not being as popular as they once were, savory pies are still a staple in some cultures worldwide offering affordable and portable hearty meals.
The Importance of Pastry
As exemplified by the concentration of the French and Italians, pastry is a crucial part of a delicious savory pie. Unlike many foods, the perfect pastry does not simply rely upon a good recipe. In addition to a tried and true recipe, there are a number of other tricks and tips to making the perfect pie pastry. Lets take a look at some of these below.
- Grease or butter pie dishes before baking to avoid sticking.
- Drain off excess liquid to avoid a soggy pastry bottom.
- Avoid a pastry gap by letting pies cool before putting in the refrigerator.
- Keep butter, fats and liquid pastry ingredients chilled.
- Cut your butter or shortening into your flour using a fork to avoid overworking pastry dough with your hands.
- Allow your dough to rest in the refrigerator for around an hour before rolling.
- Dont be afraid to re-refrigerate your pastry dough if its getting too warm or gummy.
- Ensure that you have made enough dough for the pie crust size you need. Allow an extra 3 on top of your pie dish diameter.
- Dont overstretch your dough!
- Always allow your oven to preheat and use a thermometer to check the temperature before cooking.
- Allow for variations in your pie crust no single recipe comes out the same way every time!
- Utilize aluminum foil or a pie shield to avoid burning the pastry crust.
What You Need to Know About Seasoning
Just as your pastry is crucial to the success of your savory pie, so too is your ability to adequately season your pie filling. Every recipe that you undertake will include details on how to properly season the filling of your savory pie, but it is still important to taste your pie filling EVERY time. Occasionally, you may find that a particular recipe lacks enough seasoning for your own taste, so tasting the filling will allow you to make adjustments as necessary. Additionally, when you get brave enough to experiment with your own savory pie recipes, you need to make sure that you add enough seasoning to your filling! Seasoning can vary and include the types of supporting ingredients you use, the amount of salt you use, the types of herbs you use and the types of spices or spice mixes you use. Just be sure not to experiment with seasoning flavors by adding them directly to the pie filling! Taste your seasoning first to avoid contaminating your pie filling with seasoning that may be too overpowering.
