Welcome! Whether youve been vegan or eating a plant-based diet for some time, or are just putting a toe in the water now, this is the book for you. Within its pages, youll find the answers to your questions, something delicious to eat and all the tools you need to live a vegan lifestyle with ease.

Personally, I was brought up as a vegetarian and have never eaten meat in my life, and gradually, over time I also stopped eating any dairy produce until my diet became completely vegan, which it has been for a number of years now. In fact, my three daughters and two of my granddaughters are now vegan too; it seems a natural progression for many vegetarians. Recent years have seen the vegan movement go from strength to strength and many people are now turning to plant-based lifestyles for ethical, environmental and health reasons. Because of this the breadth and quality of vegan products readily available has greatly increased and there has never been a better time to be vegan! It is a wonderful way to live and eat and I thoroughly recommend it.

There are an abundance of resources all over the internet and different recipes and advice, but I wanted to write this book to bring all the basics together in one place as a go to vegan reference book, as well as offering some showstoppers I wanted to take the same approach as I had always done for my vegetarian cookery books offering timeless family favourites, simple stunning suppers, meals for every occasion, in fact, together with lots of practical tips and ideas that I have found helpful in my own cooking.

what going vegan means in practice?

Depending on what your starting point is, going vegan can be a gradual process or something that happens overnight, and everyones personal experience is unique. Making the change can be straightforward if youre already vegetarian many vegetarians find, as I did, that over time they naturally become more and more vegan in their eating and lifestyle but there are equally some who feel quite dependent on cheese as a flavour and ingredient and find it hard to imagine cutting it out completely. There are also countless people making the change from a traditional meat-eating diet straight to veganism. It may feel quite different at the beginning: looking carefully at ingredients lists when shopping (see ), telling friends about your dietary needs when they cook for you, and asking for a special menu when you eat out. Whatever your starting point, if you feel the urge to go vegan, I encourage you to give it a try.

A good way to make the changes and to ensure they stick can be to introduce some simple swaps to your usual diet: change from dairy milk to plant milk, eat veggie burgers instead of beef burgers, vegan cheese instead of dairy; or perhaps make one meal a week, or even one meal a day, completely plant-based, if you think you can do it: breakfast or lunch are good ones to pick, and then you might like to treat yourself to a good vegan meal in a restaurant, vegan fast food place, or whatever takes your fancy. There are many options, were getting spoilt for choice, unlike when I was growing up as a vegetarian and all we could get was a choice of an omelette or a simple salad!

Some people will decide to dive straight in and become vegan overnight, and with all the information and products now available its easier than ever to take the plunge. Its a personal thing, and only you can know what will work for you. In my experience, going vegan is a journey, so take it at your own pace, and dont give up or worry too much at any setbacks along the way. If you make the intention to succeed, youll get there in the end and every little change you make helps you on your way.

One thing I can say is that most people are amazed and delighted at how delicious vegan food is, and also at how easy it can be to make. Indeed, it can be as elaborate and gourmet, or as simple and budget-priced, as you like; the choice is yours. You will find many recipes and ideas for snacks and meals for all occasions in this book and I hope you will enjoy them.

The healthiness of the diet is endorsed by many authorities internationally; you can read what they say online, but heres just one of them from the Academy of Nutrition and Dietetics, 2016:

Appropriately planned vegetarian including vegan, diets are healthful, nutritionally adequate, and may provide health benefits for the prevention and treatment of certain diseases. These diets are appropriate for all stages of the life cycle, including pregnancy, lactation, infancy, childhood, adolescence, older adulthood, and for athletes. Plant based diets are more environmentally sustainable than diets rich in animal products because they use fewer natural resources and are associated with much less environmental damage.
