Preheat Panini press to medium high heat by following the instruction s .
In a food processor, whip cheese and honey till fluff y .
Put butter on 2 slices of bread, flip the slices and put 1 tablespoon of sweetened mascarpone cheese on both slice s .
On one slice, spread apple slices and close it with other slice while butter side is u p .
Sprinkle light brown sugar at the top of bread slice s .
Put bread slices over the Panini press and cook for 4 minutes while lid is close d .
Before serving, top each slice with a scoop of vanilla bean ice crea m .
