Spicy Breakfast Panini
Enjoy a quick and amazing breakfast panini in no time. Delicious salsa adds a great flavour to your regular eggs.
Serving size:
Prep time: 5 minutes
Ingredients:
- 1 baguette
- 1 scrambled egg
- cup Pepper Jack cheese, shredded
- cup salsa
- 2 strips of bacon, cooked and crumbled (optional)
Instructions:
1. Cut baguette in half and sprinkle with cup of the cheese, top with scrambled egg, salsa and bacon if used.
2. Sprinkle remaining half of cheese on top. Fold over other half of baguette and press gently.
3. Grill or press sandwich for 2 3 minutes until golden brown and cheese has melted.
Eggplant Mozzarella
Made with fresh eggplant and delicious, melty mozzarella this panini is just perfect. It has a delicious grilled flavour and amazing texture because of how beautifully the eggplant and mozzarella melt together.
Serving size:
Prep time: 5 minutes
Ingredients:
- 2 slices of Italian bread
- 1 teaspoon of olive oil
- 2 slices of grilled eggplant
- Fresh mozzarella
- Salt and pepper to taste
Instructions:
1. Brush Italian bread with olive oil and grill in panini press, insides facing down for 1 minute.
2. Add eggplant and mozzarella on one slice of bread, sprinkle with salt and pepper
3. Press the other slice of bread on top of the filling and grill for 3 4 minutes, until golden and crisp.
Chicken Pesto Panini
This panini has a delicious basil flavour and it pairs perfectly with grilled chicken breast. This is a great option if you have some left-over chicken you want to use up!
Serving size:
Prep time: 15 minutes
Ingredients:
- 1 ciabatta roll
- 2 teaspoons of olive oil
- 1 boneless chicken breast
- 1 teaspoon of dried Italian seasoning
- A pinch of crushed pepper red pepper flakes
- 3 tablespoons of pesto
- tomato, thinly sliced
- Mozzarella, thinly sliced
- Salt and pepper to taste
Instructions:
1. Heat olive oil in a skillet over medium heat. Season chicken breast with salt, pepper, Italian seasoning and red pepper flakes.
2. Saut chicken over medium heat for 5 - 7 minutes, until cooked through.
3. Remove from pan and allow to cool.
4. Assemble panini: Slice rolls in half and layer meat, cheese and tomatoes. Spread pesto on one half of the roll and in between fillings.
5. Grill or press with a sprinkle of olive oil in press or pan for 3 minutes on each side, or until cheese has melted and bread is crisp.
Breakfast Panini
Fluffy eggs, crispy bacon and melty cheese, all your favourite breakfast items combined into one delicious panini!
Serving size:
Prep time: 15 minutes
Ingredients:
- 1 pita bread
- 1 scrambled egg
- cup cheddar cheese, shredded
- cup mozzarella cheese, shredded
- 1 pork sausage, cooked and chopped
- 2 strips of bacon, cooked and crumbled
- cup of roasted red pepper
- 1 teaspoon of butter
Instructions:
1. Spread butter on one side of the bread. Sprinkle with of each type of cheese, top with scrambled egg, peppers, sausage and bacon.
2. Sprinkle remaining half of cheese on top. Fold over other half of bread and press gently.
3. Grill or press sandwich for 2 3 minutes until golden brown and cheese has melted.
Panini Pizza
All of your favourite pizza ingredients melted together between a warm, crispy roll, what more can you ask for?
Serving:
Prep time: 7 minutes
Ingredients:
- 2 flatbreads
- 2 ounces of Pepperoni, sliced (6 8 slices)
- 4 ounces of Mozzarella cheese, sliced
- 4 fresh Basil leaves, torn
- cup of marinara sauce
Instructions:
1. Cut the flatbread in half spread a layer of marinara sauce on both sides. Top with a few slices of pepperoni, mozzarella cheese and basil leaves.
2. Close the sandwich and press for 4 6 minutes, until cheese has melted and bread is crisp.
