When you think of Asian dishes, you always tend to lean toward the land of the orient and Chinese dishes. However, Cambodian recipes take plenty of inspiration from Vietnam and Thailand cooking, so there is the better of two countries on offer.

With juicy chunks of meat on skewers; and cooked to perfection on a grill. There is succulent fish that comes in a sweet sauce and wraps up in little parcels. You can make these Cambodian recipes as plain or as elaborate as you wish. The curries can be spiced up, or you can leave them as-is and savor the subtle tastes of coconut as it slips across the tip of your tongue.

If you have kids, there are many dishes that they can find their new favorites. Getting sticky with some tamarind Chicken wings, or wrestling with the BBQ pork coconut coated chunks by the outdoor grill. Soon, you will all have your favorites, and it is only a matter of time before all your friends will be coming around for the secret coconut cream recipe.

A light and easy to prepare stir-fry that is bursting with flavors from the fresh vegetables and the sweet sticky sauce you cook them in. This is perfect for a light lunch with the addition of the noodles. These can be swapped for white rice is you want something more substantial.

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Ingredients

  • 1/2 a packet brown rice vermicelli noodles
  • 1 medium zucchini, halved in length and slice in long strips
  • 4 green onions, remove ends and roughly chop
  • 4 baby corn, slice into strips
  • 1/2 red bell pepper, remove seeds and Julien
  • 1 medium carrot, sliced julienned
  • 1/2 small head of broccoli, divide into small florets
  • 1/2 cup of snow peas, cut in strips
  • 1 garlic clove, chop or mince
  • 1 fresh chili, remove seeds and chop
  • 1 tablespoon of grapeseed oil
  • 2 drops of sesame oil
  • Sesame seeds for garnish

Cambodian Sauce

  • 1/4 cup of room temperature water
  • 2 tablespoons of coconut sugar, can use brown sugar as an alternative
  • 1/2 cup of fresh pineapple, pured
  • 2 tbsp of tamarind
  • Small pinch of sea salt

Instructions

1. Cook the noodles following the instructions on the pack. While cooking, prepare all your vegetables.

2. Place a wok over low-medium heat and add the grapeseed oil and sesame oil.

3. Toss in the green onions and cook for 2 minutes until fragrant. Add the garlic and cook while stirring for another minute until fragrant.

4. Add all the vegetables and cook until they begin to become tender.

5. Add to a blender the 1/2 cup of pineapple with the water and puree.

6. In a small bowl, add the puree, coconut sugar, tamarind, and the salt. Mix until combined and set aside.

7. Once vegetables are tender, add the sauce and cook for a further two minutes.

8. Add in the cooked noodles, mix and heat through.

9. Garnish with sesame seeds to serve.

Ingredients

  • 1 x 20 oz. can pineapple chunks, retain juice
  • 1 cup of carrots, sliced
  • 4 cups of fresh broccoli, chopped
  • 1 medium onion, peel and cut into wedges
  • 1 bunch of scallions, cut in 1-inch chunks
  • 1 cup of water
  • 2 x garlic cloves, crush or mince
  • 1 tsp of fresh ginger, grated
  • 1 large green pepper, remove seeds and chop into 1-inch pieces

Sauce

  • 1 cup of unsweetened pineapple juice
  • 1/3 cup of coconut or brown sugar
  • 1/4 cup of apple cider vinegar
  • 2 1/2 tbsp of soy sauce
  • 2 tbsp of cornstarch

Instructions

1. Drain the pineapple and retain the juice.

2. In a wok over low-medium heat, add half the water, ginger, garlic, and all the vegetables, apart from the broccoli.

3. Saut for 5 minutes, then add the other 1/2 cup water, and the broccoli.

4. Stir, and then cover. Reduce to low heat and cook for 5 minutes.

5. In a small bowl, mix all the sauce ingredients. Add in the pineapple chunks, then add these into the wok and cook while stirring until the sauce thickens.

6. Serve hot over rice or noodles.

  • 1 tbsp of sesame oil
  • 1 tsp of sea salt
  • Chili sauce to taste

Instructions

1. Peel and slice the cucumbers lengthwise.
