Miso Soup
Serve this delicious soup for dinner with tofu and fried rice.

Ingredient List:
- Dashi Granules: 2 tsp.
- Silken tofu (diced): 8 ounces
- Green onions (sliced diagonally): 2 (chop -inch pieces)
- Miso paste: 3 tbsp.
- Water: 4 cups

Procedure:
Take a medium pan over medium hea t . Combine water and dashi granules in the pan and let this mixture boi l .
Decrease heat and whisk in miso past e . Mix in tofu and stir wel l .
Separate the green and white layers of the onion and add them to this sou p . Gently simmer for 2 3 minutes before serving sou p .
Authentic Japanese Soup
Enjoy this authentic recipe with scallop and noodle. It tastes good with dashi stock.

- Ramen noodles (instant, ignore seasoning packet): 3 ounces
- Water: 2 1/2 cups
- Soy sauce: 2 tbsp.
- Mirin (Japanese wine): 2 tbsp.
- Dashi no moto (Fish-broth or instant dashi powder): 1 1/3 tsp.
- Rice vinegar: 1 tsp.
- Sliced shiitake mushrooms: 5
- Sliced green onions: 2
- Minced fresh ginger: 1 tsp.
- Butter: 1 tbsp.
- Scallops: 8

Procedure:
Boil water ( 2 cup s ) in a saucepa n . Put ramen noodles in boiling water and cook for almost 2 3 minutes to tender, drai n . Rinse noodles with cold water to instantly stop cooking procedur e . Divide noodles between two soup bowl s .
Boil water ( 2 cup s ) in a pa n . Mix rice vinegar, dashi, mirin, and soy sauce in the simmering wate r . Decrease heat to almost lo w .
Add ginger, green onions and shiitake mushrooms to boiling wate r . Cook for almost 3 5 minutes to tender mushroom s . Pour almost of this mixture over every portion of ramen noodle s .
Melt butter in one skillet over medium hea t . Cook scallops in butter to opaque in the center, for almost 3 minute s . Put four cooked scallops into every soup bow l . Serve ho t .
Pumpkin Miso Soup
Serve this Japanese soup with tofu and pumpkin.

Ingredient List:
- Sesame oil: 2 tsp.
- Small pumpkin (seeded, peeled and cubed):
- Chopped green onion (cut diagonally): 2
- Fresh ginger (chop into matchsticks): 2 inches
- Chile red peppers (sliced diagonally): 2
- Soy sauce: 2 tbsp.
- Sesame seeds (toasted): 2 tbsp.
- Buckwheat noodles: 2 ounces
- Chopped cilantro: 2 tbsp.
- Cubed firm tofu: 3 ounces
- Miso paste: 2 tsp.
- Pickled ginger: 2 tbsp.

Procedure:
Boil water in a saucepan and add soy sauce, ginger, and pumpkin in wate r . Cook pumpkin for almost 3 minute s . Add noodles to pumpkin blend and cook them for almost 4 minute s .
Mix tofu in the pumpki n - noodle blend and cook for almost 5 10 minutes to tende r .
Put miso paste ( 1 tsp . ) in every serving bow l . Ladle hot water in each bowl and whisk to dissolve mis o .
Equally divide soup ( pumpki n - tof u ) between two serving bowls, garnish every bowl with sesame oil ( 1 tsp . ) , chopped green onion ( ) , red chile pepper ( 1 slic e ) , sesame seeds ( 1 tbsp . ) , cilantro ( 1 tbsp . ) and pickled ginger ( 1 tbsp . ).
