Introduction
Japanese food reflects the culture and traditions of the people passed down from generation to generation. Aside from this, Japanese people use a lot of stock or dashi, which is the base of their cooking.
Secondly, a Japanese dish is a balanced meal of different components, including but not limited to rice, nori, tsukudani, broth, pickles/fermented food, proteins, vegetable, and a homemade drink.
You will be seeing lots of raw foods, but they are delicious. Note, always use fresh ingredients when cooking Japanese food.

Nikujaga

Ingredient List:
- 5 potatoes
- 3 onions
- 2 carrots
- 4 tablespoons of soya sauce
- cup of sake
- 4 tablespoons of red wine
- 1 tablespoon of sugar
- Salt to taste
- 17 oz. of pork meat

Methods:
Cut the pork meat into small lines. Prepare them in an oiled frying pan. Add salt to taste.
Cut potatoes, carrots, and onions into cubes. Add them to the meat.
Cover them with 1 cup of water. Cook for 15 minutes.
When potatoes become soft, add soya sauce, sake, red wine, and sugar. Cook for another 15 minutes.
Serve and enjoy!
Japanese Spring Rolls

Ingredient List:

- 2 cups of flour
- 6 tablespoons of starch
- 5 cups of water
- teaspoon of salt
For stuffin g :
- 4 garlic cloves
- 1 onion
- 2 carrots
- 1 cup of spinach
- 1 zucchini
- 1 red bell pepper
- 1 cup of mushrooms

Methods:
Cut garlic cloves, onion, carrots, spinach, zucchini, pepper, and mushrooms into smaller pieces to taste.
Mix flour, water, starch, and salt together. Use a mixer and then let the mixture sit for at least 30 minutes in a fridge.
From the resulting mixture, make thick pancakes in an oiled frying pan.
Fry vegetables in a frying pan. Spice them to taste (soya sauce, ginger, salt, pepper, red pepper).
Fill pancakes with vegetables and then roll them.
Fry the resulting rolls in deep oil for 3 minutes each.
Serve and enjoy!
Sour Ginger Sauce
Ideal for sushi!

Ingredient List:
- 7 oz. of ginger
- 1 teaspoon of salt
- 1 tablespoon of sugar
- cup of rice vinegar

Methods:
Clean and peel the ginger.
Cut ginger into small pieces, pour salt over it and let it sit there for 60 minutes. (To release the water)
In one cooking pot, cook vinegar with sugar for 10 minutes.
Pour vinegar mixture over the ginger and then let it cool.
Keep in a fridge!
Japanese Pancakes

Ingredient List:
- 1 cabbage head
- 1 zucchini
- 1 red bell pepper
- 4 tablespoons of oil
- 1 onion
- 2 cups of flour
- 2 tablespoons of water

Methods:
Cut onion and pepper into small cubes and then saut them in an oiled frying pan.
Wash the zucchini and cut it into small cubes too. Grind the cabbage.
Add them to the frying mixture and continue.
Then prepare the pancakes:
- Combine flour and water. Use mixer.
- Add fried vegetables to the mixture.
- With the kitchen spoon, pour the mixture into an oiled frying pan and make thick pancakes.
Serve with sauce to taste and enjoy! (We suggest Yum Yum sauce, which you can find on the next page)
Japanese Cheesecake

- 6 eggs
- 9 oz. of cream cheese
- 2 oz. of butter
- 7 tablespoons of milk
- 3 oz. of flour
- 1 oz. of starch
- teaspoon of salt
- 3 tablespoons of lemon juice
