Can you find pre-made seasoning and spice blends in stores?
Yes, indeed, you can, but you can customize them and save money by making your own ones at home. In addition, the brands you find in stores often contain MSG, high salt content and agents that keep them from caking. You can regulate your salt intake and avoid chemical ingredients by making your own blends.
What spices and herbs are used in making homemade seasoning and spice blends?
Some of the more common ingredients include peppercorns, chili powder, cinnamon, cumin, ginger, allspice, pepper flakes, dried mustard, marjoram and bay leaves.
How can you keep your seasoning and spice blends from developing clumps?
You can stop clumps by adding several rice grains or several dried beans to your containers. They keep moisture away from spice blends, in addition to keeping them from clumping.
Can spices get hard when they are stored?
Exposing spices to any type of light will cause them to start breaking down. Drier spices can absorb some moisture found in the air. That can cause the spices to become hard or clump. Storing in airtight containers will help to keep them tasty and fresh.
Can seasoning and spice blends be kept in your refrigerator?
Some blends include ingredients that should be refrigerated, but most spices are best kept in cool and dark areas. Cabinets or pantries with doors work best.
Should seasoning and spice blends be stored in glass or plastic?
Metal and glass are both excellent choices for storing spices. The best containers, though, are usually made from food grade plastic. But glass jars will usually work fine as long as their lids fit tightly.
How can homemade seasoning and spice blends be used?

What is the shelf life of homemade seasoning and spice blends?
As a general rule, most blends will remain fresh for a year or so, but I usually only keep them for 6 months. Some combinations wont last as long as others. The recipes in this cookbook let you know where to store and how long each blend remains fresh. You can also pour a seasoning blend that is more than a year old into a frying pan on low heat, and it will aid in reviving its flavors.

1 Garam Masala Spice Blend
This is a simple Indian spice blend thats easy to make. Its a shorter recipe than some but still gives you traditional Indian flavor. It warms up dishes like tikka masala and gives them a richer taste.
Makes 3 & 1/2 tbsp.
Cooking + Prep Time: 5-7 minutes
Ingredients:
4 tsp. of cumin, ground
1 & 1/2 tsp. of pepper, ground
1 & 1/2 tsp. of cardamom
1 & 1/2 tsp. of coriander, ground
1 tsp. of cinnamon, ground
1/2 tsp. of cloves, ground
1/4 tsp. each of dried chili flakes and nutmeg, ground
Instructions:
Combine all the ingredients above in a small-sized bowl. Use as desired and store in a dry and cool place for up to 6 months.
2 Old Bay-Style Seasoning Blend
Old Bay may be the most popular seafood seasoning around. This homemade version has superb flavor, and it gives your seafood a savory punch. Its good on roasted vegetables too.
Makes 4 tbsp.
Cooking + Prep Time: 5-7 minutes
Ingredients:
2 tbsp. of sweet paprika
1 tbsp. of celery salt
1 tsp. of dry mustard
1 tsp. of celery seeds
1/4 tsp. of nutmeg, ground
1/4 tsp. of cinnamon, ground
1/2 tsp. of black pepper
A pinch of cayenne pepper
Instructions:
In a small-sized bowl, whisk all the ingredients together. Use as desired, then store in an airtight jar or container. It can be stored in a dry and cool place for as long as a year.
3 Moroccan-Style Spice Blend
This homemade spice blend adds the flavor of Morocco to dishes native to the area and other dishes too.
Makes 1/4 cup

Ingredients:
2 tsp. each of nutmeg, ginger and kosher salt, ground
1 & 1/2 tsp. each of cardamom pepper and mace, ground
