Preface
Peeking out the window to see a world quieted by freshly fallen snow is a matchless joy, promising a day filled with wintry adventures bookended by warm, nourishing meals. As brisk weather slows our daily pace, we find more reasons to gather and time to cook, because as much as we love skiing, sledding, skating, snowshoeing, and snowball fighting, ultimately, when the wind is whipping up outside, we take a shine to being inside. Braving the chill makes the chili/braise/no-holds-barred cabin bar feel like just desertsand speaking of desserts, any season all about enjoying them is A-OK with us. (If thats you, too, turn directly to .)
We hope youll use this book as a guide to creating holiday-level happiness on any given day, whether as a primer for a party or a planner for a week filled with Alpine-inspired activities, which could take place in a snowy cabin, a ski house rental, an Alsatian chalet (our personal sugarplum dream), or your own festive home. Youll find in this book a surfeit of fireside snacks, suppers thatwhether because they come together easily or are even better warmed up the next daykeep you in the conversation and not just the kitchen, delicious desserts, bountiful booze, and beautiful breakfasts. Theres enough chocolate and cheese in here to transport you to a Swiss mountaintop, but if thats not your fantasy destination, the menus throughout the book can whisk you to any number of idyllic escapes. Many of the projects in these pages, such as ), are essentially group activities that end in a meal. Youll also find ways to cook for a delightful date, provision a snowshoe picnic, and ace feeding a hungry family in the poorly equipped kitchen of a faraway dwelling.
With an eye to that getaway-cabin scenario, before you hit the road, check the packing lists of essential equipment that follow the recipes youre planning to make. That way you wont leave home without your Microplane grater (which is probably a principle to live by) or can anticipate what you might need to improvise/compromise. Given that you might be stocking a bar for a weekend, not a lifetime, we aimed for a broad cocktail list intended to offer options to explore a new interest. Whether youre a mezcal maven or a Scotch savant, we suggest that you pick a snowy lane (in the form of a good bottle) and stick with it. When it comes to pantry ingredients, look to the bulk bins to buy small quantities so youll have the freshest spices while youre on the roadparticularly for those gingerbread spices youre less likely to use year-round. (Note: All recipes were developed using Diamond Crystal kosher salt.)
This is the season of dinners with friends, game nights with family, baking projects, and a pot of soup perpetually warming on the stovetop to feed anyone who wanders out of their book nook looking for lunch. Whether youre planning for yourself, a pair, or a crowd; whether youre a beginner or an experienced cook; whether youre just here for the fondue or the stocking stuffer (the book fitswe checked); we hope youll find something that delights you in these pages.
Now lets hope for a snow day! And be sure to show off your delicacies as you do. Join us online at #snowycabincookbook to share your sundries, see photos that inspired the beautiful illustrations by Monica Dorazewski, and pop by with any questions for a virtual fireside chat. In the season in which everyone gravitates to the kitchen, we couldnt be happier to have you in ours.
xo,
Marnie and Jen
Chapter 1
From Snowshoes to Slippers
When contemplating your snow-day foray, certain frigid-weather fundamentals must be taken into account while planning and packing, lest you accidentally barrel into the backcountry sans striped retro ski suits, schnitzel fixings, or the . This concise cabin compendium will guide you from home to lodge hearth, helping to ensure that the family snowmobile is properly outfitted with tire chains and emergency road snacks, every mitten has a match and every leaky snow tube a patch, no fewer than a dozen cabin fever relievers are at the ready should blizzard-induced boredom set in, and the slow cooker and schnapps are firmly stowed somewhere between the snowboard boots and the aprs-ski Snuggies.
