I would like to dedicate this to my mostly adult children, Peter and Sienna. May the joy of your creativity flood your consciousness and disrupt your logic often.
Contents
Welcome, baker! If youre opening this book, it means you are pursuing your baking goals, and that automatically earns you brownie points.
When I first opened my own bakery, my children were the same ages you are now. Not only did they like sneaking down to my shop in their pajamas for dessert, but they also enjoyed helping me, after school and on weekends, make what the bakery sold. Like you, they were capable of far more than just decorating holiday cookies. I have also been amazed by the kiddos in my baking classes. They might have needed a step stool to reach their workstations and some assistance removing their baked goods from the oven, but their results were amazingas good as or even better than the adults standing right next to them!
Every time you bake, you will learn something new. That does not mean everything you bake will come out perfectly the first time. That rarely happens, even for experienced bakers. Baking is challenging! The most important thing is to always try again. We bakers are never-give-uppers! You will see that, with each new recipe you try, you will get more and more confident until every recipe in this book is a snap. Conquering the challenge is one of the most rewarding parts of baking (the other part, of course, is the delicious food!).
But, if youre ever unsure about reading a recipe or using a tool, dont be afraid to ask for help. Professional bakers dont do everything alone, and neither should you. Asking for help will not only keep you safe, but also make you more productive. Baking is a team sport!
Is baking your magic power? Are you courageously curious, especially when you tie on an apron? Have your friends and family swooned over your kitchen creations? If so, lucky you! You have discovered the ability to excite and delight others with your scrumptious, finger-licking delicious food. If youre ready to take your baking and decorating skills to the next level, then come along, pastry pioneer. This book of recipes will be your guide through many new kitchen adventures. Together, we will work to expand your culinary awesomeness!
