Author Estelle Sacharowitz reveals that she thinks about food all the time. And as I wonder what its all about, and why I do what I do, I realise that its all about us. Its about you, its about me, its about people. Its about our complexities, memories and sweetness. Its about trying to capture time in a form that is familiar, comforting and definite ... Its about creativity and curiosity. Its about needs, primal and necessary, and also emotional. And as a magician waving a wand, Estelle distils this into an array of dishes that feeds both body and soul in the most delightful and tempting manner. From humble but comforting soups, through nourishing bowls and elegant meals to impress, to bountiful platters, you wont be able to resist. Simply submit and enjoy. And as Estelle says, Make and eat something that causes you to stop and think, this is wonderful. Life is full of wonder.

ACKNOWLEDGEMENTS - photo 2ACKNOWLEDGEMENTS No book particularly a beautiful cookbook is the work of - photo 3ACKNOWLEDGEMENTS No book particularly a beautiful cookbook is the work of - photo 4ACKNOWLEDGEMENTSNo book, particularly a beautiful cookbook, is the work of the author alone.Firstly, thank you to my husband Eric, for your encouragement and love in guiding me through this book. And to my children and their spouses, Wayne, Leat, Grant, Nicky, Dean, Caryn, Andy, Paul you are my best critics. My grandchildren Adam, Aaron, Mika, Josh, Kaylee, Gia, Talia, Levi, Jade and Kesiah, thank you for loving my food.To the team at Penguin Random House: Bev Dodd for your support and belief in my ability to give life to this project, achieved during difficult times (a world pandemic, no less); Helen Henn, my designer, you were with with me all the way; and Cecilia Barfield, for your meticulous editing. Then to Karen Alsfine, my special friend and support, thanks for your beautiful writing. Roelene Prinsloo, your photography is spectacular, and Taryne Jakobi, your styling is simply beyond words. Wally Clack of Walter E Designs, your floral pieces are magical, adding touches of artistic perfection. Whats it all about, food? The story of how we sustain ourselves; how we feed ourselves and how we feed others. Its nurturing to cook and to eat. It has always been this way for me.Thinking about food entices me from my bed. For one, I simply love breakfast; I think its my favourite meal, and it holds potential for the day ahead. Slow-cooked oats, or sourdough toast with smashed avo, or poached eggs. Breakfast is not just about toasted grains or a not-too-soft yolk; its about a beginning. There is coffee. There is always coffee. I do not profess to know how to make great coffee, but I know where to find it. The same goes for other ingredients: where and how I buy is as much a part of the story as what I cook.Surveying the weekly organic fresh food market is an adventure in itself. Markets are about origin. There are stories there about the growers. Food leads me to think about people and the planet. Often, while sauting the leeks I purchased that morning, or chopping the amber heirloom tomatoes, I find myself lost somewhere in the past, because food is all about memory too, and my love of being in the kitchen began long ago.A certain smell is like a sensory album, the images and conversations kindled, and I can see my mothers hands. I remember the feel of the kitchen counter, her burnt orange Le Creuset stoneware, someones voice asking, Whats for dinner? My thoughts turn to dinner not long after I stop thinking about breakfast, mostly because I often make dinner for others. If it was only me, I could easily repeat the sourdough toast, especially when butter melts into the tiny holes. When my children were young, whats for dinner was a never-ending question. It wasnt only about what I placed on the table; it was about the days stories. It still is, and when my children come to dinner, with their children, I like to prepare large platters we share our meals and we share our lives. This is what food is about too.I love to pick from large platters, assembling a mini version on my plate or in a bowl. Im interested in what others choose too how people combine flavours, textures and colours. Food is about what we see and how we feel when we eat. Its an experience, sensual and nuanced. Its about love, which is why we use the word love so often in relation to what we eat. Its cake yes, but its also contentedness, and childhood, and passion. Its Mediterranean, definitely, but its also history and travel and dreams. Its soup, of course, but its also warmth, togetherness and calm.I think about food all the time and as I wonder what its all about and why I do what I do I realise that its all about us. Its about you, its about me, its about people. Its about our complexities and memories and sweetness. Its about trying to capture time in a form that is familiar, comforting and definite. Its about creativity and curiosity. Its about needs, primal and necessary, and also emotional. Its about savouring, pausing and noticing. There are so many layers aside from the obvious and we are not always cognisant, nor should we be, but now and again we make and eat something that causes us to stop and think, this is wonderful. Life is full of wonder.Maatjes herring sandwich - photo 5Maatjes herring sandwich - photo 6Maatjes
