Welcome to The Tagine Dream .

Are you ready for a magical trip? We will learn everything there is to know about making delicious Tagines.

Tagines are basically a type of stew. They are most popular in Northern Africa and they should be cooked with a special clay pot called a tagine.

It is not necessary to use a Tagine when cooking these recipes, a normal saucepan will do. But an authentic Tagine is cooked with a Tagine pot!

We will begin with some tagine preparations.

Basically before you start cooking with your tagine it is a good practice to cure it with some olive oil.

I will explain the details of tagine curing in the first recipe of this cookbook so be sure to read it carefully. Then we will learn some authentic Arabic and Mediterranean spice mixes that will be used throughout the cookbook.

The tagines in this cookbook span the entire North African continent and also the Mediterranean world.

We will try to focus on Morocco, Tunisia, and Algeria. But these countries are only the beginning.

Hopefully by the end of the cookbook you will be ready to make your own unique tagines and share them with the world!

Tagine Preparations

Ingredients

  • warm water
  • 1/4 C. olive oil

Directions

  • Fill your sink or a kitchen basin with water and let your tagine sit in the water for 2 hrs.
  • Now rinse the tagine and coat the insides of it with olive oil liberally.
  • Place the tagine in the oven for 2 hrs at 350 degrees.
  • Enjoy.

Ras el Hanout
(Spice Mix)

This is a Moroccan spice mix good for meats and is a stable in most Moroccan dishes.

Ingredients

  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 3/4 tsp ground cinnamon
  • 3/4 tsp freshly ground black pepper
  • 1/2 tsp ground white pepper
  • 1/2 tsp ground coriander seed
  • 1/2 tsp ground cayenne pepper
  • 1/2 tsp ground allspice
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Directions

  • Combine salt, turmeric, cinnamon, black pepper, ginger, white pepper, coriander, cayenne pepper, cumin, allspice, nutmeg, and cloves in a small sized bowl thoroughly.
  • Store this in a container that is airtight up to 1 month.

Za'atar
(Spice Mix)

Ingredients

  • 4 tablespoons ground sumac
  • 2 tablespoons whole thyme
  • 3 tablespoons toasted sesame seeds, coarsely ground
  • 2 tablespoons oregano
  • 2 tablespoons ground marjoram
  • 1 teaspoon savory
  • 1 teaspoon basil
  • 2 tablespoons sea salt

Directions

  • Grab a mortar and pestle and add in: sumac, thyme, and sesame.
  • Grind the spices until everything is smooth then add in: the oregano, marjoram, savory, and basil.
