  • Beef Steaks, about 1-inch thick 2 pounds

The Rub

  • Salt 1 tablespoon
  • Ground black pepper tablespoon
  • Olive oil 2 teaspoons

The Fire

  • Fill hopper of the smoker with hardwood pellets, any flavor, and set drip pan over the fire pot.
  • Plug in the smoker and set the temperature to 225 degrees F using the control panel.
  • Wait for 10 to 15 minutes or until the fire starts in the grill and smoker reach to the desired temperature.

Method

  • In the meantime, prepare steaks.
  • For this, brush each steak with 1 teaspoon oil and then season with salt and black pepper.
  • When smoker preheats, place seasoned steaks on the grill, close with a lid and let smoke for 1 hour and 30 minutes or until steak internal temperature reach to 120 degrees F.
  • Then remove steaks from grill and let rest for 5 minutes before cutting into strips.
  • Season with salt lightly and serve.

  • Beef Brisket 12 pounds

The Rub

  • Onion powder 1 tablespoon
  • Garlic powder 2 teaspoons
  • Salt 3 tablespoons
  • Ground black pepper 3 tablespoons
  • White sugar 1 tablespoon
  • Red chili powder 2 teaspoons
  • Chipotle powder 2 teaspoons
  • Dry mustard 2 teaspoons

Other Ingredients

  • Olive oil 2 tablespoons
  • BBQ sauce 4 ounce
  • Beef broth 4 ounce
  • Apple juice 4 ounce

Method

  • Before preheating smoker, let brisket marinate.
  • For this, stir together all the ingredients for rub until combined.
  • Rub oil into the brisket and then rub with the prepared spice mix.
  • Place brisket in a large plastic bag, seal and let marinate for 24 hours.
  • When ready to the smoker, preheat smoker and then place marinated brisket on the grill, fat side up.
  • Close smoker with a lid and let smoke for 6 hours or until internal temperature of brisket reach to 150 degrees F.
  • While smoking, fill the hopper with more hardwood every half an hour to maintain the temperature in the grill.
  • Then place brisket in a pan, about 2-inch, pour in beef broth and apple juice and cover with aluminum foil lightly.
  • Return pan to the smoker and smoke at 190 degrees F for 3 hours.
  • While smoking, fill the hopper with more hardwood every half an hour to maintain the temperature in the grill.
  • When done, remove the pan from the smoker and uncover to remove brisket.
  • Carve brisket and serve with barbecue sauce from the pan.
Chipotle Rubbed Tri-Tip

  • Garlic powder 1 teaspoon
  • Salt 1 tablespoon
  • Ground black pepper 1/2 teaspoon
  • Chipotle chili powder 1 1/2 teaspoons
  • Ground cumin 1/2 teaspoon
  • Dried oregano 1 1/2 teaspoons

Other Ingredients

  • Olive oil 2 tablespoons
  • Tomato salsa, fresh as needed for serving

  • Fill hopper of the smoker with hardwood pellets, mesquite flavor, and set drip pan over the fire pot.
  • Plug in the smoker and set the temperature to 225 degrees F using the control panel.
  • Wait for 10 to 15 minutes or until the fire starts in the grill and smoker reach to the desired temperature.

Method

  • In the meantime, prepare tri-tip .
  • For this, stir together all the ingredients for the rub in a bowl until combined.
  • Rub tri-tip with prepared spice mix, place in a baking dish, then drizzle with oil and rub.
  • When smoker preheats, place tri-tip on the grill, close with a lid and let smoke for 1 hour or until internal temperature reach to 100 degrees F.
  • Then transfer tri-tip to a plate and cover with foil to keep it warm.
  • Select open flame option, preheat grill to 600 degrees F and then place tri-tip on the grill.
  • Let smoke for 3 to 5 minutes per side or until seared.
  • When done, transfer tri-tip to a cutting board and let rest before slicing across the grain.
  • Serve tri-tip with salsa.
