INTRODUCTION
Ive struggled with digestive issues as long as I can remember. In my twenties, I mostly ate a low-fat and whole-grain diet. My protein came from low-fat dairy items, many of which contained artificial sweeteners and unidentifiable ingredients. I ate foods that were labeled natural and whole grain without questioning the ingredients in fine print on the labels.

I went through a period when I gave up eating meat altogether in favor of only soy-derived proteins. My digestive system didnt like that either. I felt sluggish, often bloated after meals, and, to be honest, I wasnt that excited about eating food. And then, I had emergency gallbladder surgery at the young age of twenty-four. Complications left me feeling lucky to have woken up from the surgery at all. Immediately, I removed all fried foods from my diet, added lean animal proteins back in, and limited processed ingredients.

I felt fine but not great. In addition, I suffered from terrible seasonal allergies that got progressively worse over time and with each pregnancy. During my third pregnancy, I would wake up in the middle of the night, barely able to breathe and not able to take any additional medication. Soon after delivery, my newborn Gabriel seemed irritable each time I nursed. I had two other kids who were gassy and colicky, but this little dude seemed unhappier than the first two. Doing a little research, I learned that gluten and dairy proteins passed down in breast milk are often culprits of digestive issues in infants.

Within a few days, I eliminated all gluten and dairy from my diet and Gabriel seemed to respond really well. Coincidentally, I lost nearly all the pregnancy weight in about eight weeks, not eight months as with the first two kids (something shocking to me since Gabriel was my third C-section). I noticed a significant improvement after a couple of months so I decided to continue with the modified diet restrictions a little longer. However, I found myself making multiple meals for my family and I fell off the wagon often. Drastic dietary changes are never easy and being unprepared was my downfall. I was also bored with food because I ate the same things all the time.

After nearly a year, when I weaned Gabriel from breast-feeding, I returned to eating normally. With three kids and a new business, I didnt have time to be a short-order cook (and neither do you, Im sure!). Unfortunately for me, however, my allergy and digestive symptoms returned. Ill continue about my own journey in the next couple of pages. However, I feel its important to share a little about the other two people who have been instrumental in the creation of this book: my two sons Gabriel and Alex.

Gabriel: The Dairy-Free Kid
Gabriel (my third child) was born a good eater.
Gabriel: The Dairy-Free Kid
Gabriel (my third child) was born a good eater.

But while he was constantly hungry, he spit up occasionally and was very (very) gassy. When he was one month old, I removed dairy and gluten from my diet to help him digest my breast milk proteins better. He did great like this until my milk supply wasnt enough; I was working full time without the ability to pump as much as I needed to, and I had to supplement with formula. Finding a formula that he could tolerate was a bit of a challenge, but I settled on one where the milk proteins are broken down for easier digestion. For the most part he was a healthy baby but, around the seventh month, he began getting colds and sinus infections often. The pediatrician attributed his symptoms to allergies and the older two siblings bringing germs home from school.

He was put on a daily dose of allergy medicine to control the symptoms, but he still suffered. At eight months, I introduced whole-milk baby yogurt (one per day or every other day). At first, he tolerated them well and was a happy baby after his meals. Soon though, his colds came more often and stayed longer. When he was ten months old, his chest congestion was so bad for three weeks that the pediatrician thought he had pneumonia (a chest X-ray ruled it out but confirmed a lot of mucus buildup). I was constantly hooking him up to the nebulizer because he couldnt breathe.

The poor baby was miserable and sick for about two months. At the same time, he had four ear infections between month six (shortly after we introduced formula) to right before turning one. When Gabriel turned one, he entered school (daycare) three days per week. He was sick nearly every week for two straight months. Everyone assured me this was normal and that he needed to get used to the germs and build up his immunity; the pediatrician, again, said she was sure it sounded like pneumonia (and again the chest X-ray ruled it out). At this point, Id had enough with my baby being sick for seven months straight! I was tired of the allergy medicine, antibiotics, breathing treatments, X-rays, ER visits, and constant doctor checkups.
