Squash Filled Ravioli withAlfredo Sauce Fresh Pasta Squash Filling Easy Alfredo Sauce Fresh Pasta 3 cups all-purpose flour 2 large eggs 3 tablespoons water 1 teaspoon olive oil 1/2 teaspoon salt By Hand: On a clean surface make a well withthe flour. In a measuring cup mix the eggs, water and oil and salt.Pour the wet mixture slowly into the flour and mix with your 2fingers until all of the wet is incorporated. Do not force thedough to take all of the flour. If you are going to use a pastamachine to roll out the dough you may at this point form the doughinto a disk and cover with plastic wrap. Place in the refrigeratorfor 1 hour to rest.
If you going to roll this by hand you shouldknead the dough on a floured work surface for 8 to 10minutes. By Food Processor: In the bowl of your food processorcombine the flour and salt and pulse 2 to 3 times. In a liquidmeasuring cup whisk the eggs, water and oil. While pulsing themachine pour this mixture in a continuous stream and continuerunning the machine until the dough begins to pull away from thesides of the bowl. Follow directions above for hand rolling ormachine. Squash Filling 1 cup mashed, cooked butternutsquash 1/2 teaspoon salt 1/2 teaspoon freshly ground blackpepper 1 pinch cayenne pepper 1/2 cup mascarpone cheese 1 egg yolk Place cooked squash into a mixingbowl.
Add salt, black pepper, and cayenne pepper. Stir inmascarpone cheese, egg yolk. Mixing until the filling is smoothlycombined. Easy AlfredoSauce 4 Tablespoons butter 3 Tablespoons cream cheese 1 cup heavy cream or half andhalf 1 cup milk 1 garlic clove, minced 1 cup grated Parmesancheese salt, pepper pinch of nutmeg Over medium heat, melt the butter andadd garlic. Cook for 1 minute. Add cream cheese, keep stirring untilmelted.
Slowly pour in cream and milk and keep whisking. Add Parmesan cheese in small amountsand keep stirring on medium-low heat until wellcombined. Remove from heat and add salt andpepper to taste. After you have rolled the pastaout into sheets, cut the sheet into an even amount of squares.Using a teaspoon, fill the center of half with the squash filling.Brush around the filling with the egg wash and place the remainingsquares on top. Press down around the seal to push out any airbubbles. In half a gallon of rapidly boiling saltedwater add the ravioli in batches until done.
Remove to astrainer. Top with Alfredo sauce andparmesan cheese. Serves 6-8 Dinner with Les Smith Night Club Owner Les Smith picked up Elaine fordinner at his place in his cream and pink 64 Ford. The interiorwas beautiful with tan bench seats and carpets, and crank windowhandles. Stir in lime juice, cilantro and parsley;cover slow cooker and cook for 10 minutes more. *If unable to find Rotel tomatoes, substitutecanned diced tomatoes with their juice. Add canned chipped greenchili, drained well. Use small portions of pepper until you theamount of heat you want.
