Dear Reader:
When my son announced he'd decided to go away to college, I realized Dear he hadn't spent enough time on kitchen duty. Whether he chose to live in a dorm or off-campus, his cooking repertoire was going to have to expand beyond nachos and microwaving the occasional leftover pizza.
Of course, not every college presents the same range of options in the cooking department. Some schools permit microwaves in individual rooms, while others limit cooking to a common dormitory kitchen. Students living off-campus may have a fully equipped kitchen at their disposal. But all college students share the need for tasty recipes that don't require hours of preparation.
My goal for this book is to provide nutritious, easy-to-make recipes for time-tight college students. The microwave, hot plate, and conventional oven are all put to use here. Budget conscious students will appreciate recipes featuring creative ways to use leftovers. Novice cooks will find instructions on everything from boiling eggs to frying pork chops. For students fighting the Freshman 15, there are healthy snacks featuring easily transportable items such as granola bars and trail mix, as well as every student's favorite thirst-quencher the smoothie.
