Please note that in the recipes, eggs are large; milk is whole milk unless specified otherwise; flour cup measures are spooned and leveled; brown sugar cup measures are firmly packed; and butter is unsalted. Although I do not specify them in the ingredients lists, if silver drages are used for decoration, they should be removed before the cake or cookie is eaten.
emerald pizzas
Little ladies like to nibble dainty snacks while enjoying their salon sessions. Thin, crisp pizzas spread with emerald pesto and studded with tasty morsels fit the bill. If you are making large numbers of these, it may be better to bake a couple of pizzas at a time and serve wedges of those while more are baking.
Makes 4 pizzas (easily increased)
four 7-inch flour tortillas or store-bought pizza bases
2 to 3 tablespoons basil pesto
7 ounces ( pint) cherry or grape tomatoes, thinly sliced
1 cups grated mozzarella (or if you prefer, half mozzarella and half Cheddar)
Optional toppings
8 olives, pitted and thinly sliced
4 slices ham, cut into cubes
2 ounces orange Cheddar or Colby cheese, cut into cubes
Preheat the oven to 400F. Set the tortillas or pizza bases on 2 large cookie sheets and spread a thin layer of pesto over the surface of each. Put the sliced tomatoes on top of the pesto and sprinkle with the mozzarella.
Add any extra toppings the children have chosen and bake for 8 to 10 minutes, until the cheese is golden and bubbling and the tortillas or pizza bases are brown and crisp.
golden nuggets
Golden, crunchy nuggets of chicken are likely to be added to any princesss list of treasures. Serve them with Tomato Dip or Maple Mustard Dip (below), or both, and try them with Skinny Oven Fries (page 73).
