(1) Simple Cast Iron Chicken

This is another cast iron skillet chicken dish that you can make whenever you are craving something filling and simple to make. Made with carrots and cauliflower, this is a dish that your entire family will rave about.

Ingredient List:

  • 2 chicken breasts
  • 3 tablespoons of organic butter
  • 1 Tablespoon of extra virgin olive oil
  • 2 cloves of garlic, minced
  • 1 Tablespoon of parmesan cheese, grated
  • of an onion, thinly sliced
  • 2 zucchinis, chopped
  • 1 cup of cauliflower, chopped into florets
  • 3 carrots, chopped
  • 2 tablespoons of cilantro, chopped
  • 1 teaspoon of powdered paprika
  • teaspoon of salt
  • teaspoon of black pepper
  • of a lemon, juiced
  • cup of water

Instructions:

  1. Preheat the oven to 400 degrees.
  2. Place a large cast iron skillet over medium heat. Add in the olive oil and once hot, add in the onion and chicken breasts. Cook for 2 minutes on each side before adding in the smoked paprika and chopped cilantro. Stir well to mix. Remove from heat and set aside.
  3. Add in the chopped zucchinis, cauliflower florets and chopped carrots. Stir well to mix.
  4. Add in the melted butter, black pepper, dash of salt, fresh lemon juice, grated parmesan cheese, water and minced garlic cloves. Stir well to mix.
  5. Transfer the cast iron skillet into the oven to bake for 40 minutes or until the vegetables are soft.
  6. Remove and serve with a drizzling of olive oil over the top.
(2) Cast Iron Skillet Rosemary Parmesan Bread

This is an incredibly easy to make homemade bread that can be ready in just a few minutes. It is packed full of a cheesy taste that is impossible to resist.

Ingredient List:

  • 2 teaspoon of instant yeast
  • 2 cups of warm water
  • 4 cups of all-purpose flour
  • 2 tablespoons of rosemary, chopped and extra for garnish
  • 1 teaspoon of salt
  • 3 tablespoons of extra virgin olive oil, evenly divided
  • cup of parmesan cheese, grated

Instructions:

  1. In a large bowl, add in the yeast and warm water.
  2. Add in half of the flour and stir well to mix. Add in the rosemary, dash of salt and remaining flour. Continue to mix until evenly combined.
  3. Cover the bowl and set aside to rise for 1 hour.
  4. Grease a large cast iron skillet with two tablespoons of extra virgin olive oil. Place the dough into the skillet. Cover and set aside to rise for 30 minutes or until puffy.
  5. Drizzle one tablespoon of olive oil over the bread. Cut a large X into the top of the dough. Sprinkle the rosemary leaves over the top.
  6. Place into the oven to bake for 20 minutes.
  7. Remove and sprinkle the parmesan cheese over the top. Place back into the oven to bake for 20 minutes or until golden brown.
  8. Remove and set aside to rest for 10 minutes before serving.
(3) Cast Iron Cornbread

There is no other classic Southern dish that is as delicious and easy to make as this dish. Make this dish to pair alongside your next Southern meal.

  • 1 cup of all-purpose flour
  • 1 cup of yellow cornmeal
  • 1 Tablespoon of baking powder
  • teaspoon of salt
  • 1 cup of whole milk
  • 1 egg
  • 5 tablespoons of vegetable oil

Instructions:

  • Preheat the oven to 400 degrees.
  • In a large bowl, add in the all-purpose flour and the yellow cornmeal. Stir well to mix. Add in the salt and the baking powder. Stir well to mix and set the mixture aside.
  • In a medium bowl, add in the whole milk, large egg and vegetable oil. Whisk until evenly beaten.
  • Pour the egg mixture into the flour mixture. Stir well until evenly blended.
  • Pour the batter into a large cast iron skillet.
  • Place into the oven to bake for 20 to 25 minutes or until golden brown.
  • Remove and serve immediately.
(4) Scalloped Potatoes

This is a perfect dish to make to accompany any main meal that you may make. Topped off with cheesy goodness, this is a dish that your entire family will be begging for.

  • 6 Yukon gold potatoes, peeled and sliced
  • 3 tablespoons of unsalted butter
  • 3 tablespoons of all-purpose flour
  • 1 cups of whole milk
  • 1 to 2 cups of Gruyere cheese, shredded
  • 2 cloves of garlic, minced
  • 1 sprig of thyme
  • Dash of salt and black pepper
