Any meal of your favorite cuisine can get a bean upgradeconsider Indian cooking, which features an endless amount of dishes made with beans! Beans are full of protein and fiber while being low in fat. They are a great source of iron, copper, phosphorus, manganese, and magnesium. But theyre also chock-full of thiamin, folic acid, riboflavin, and vitamin B6. Theres just so much to love about beans! Beans can help ease the strain on a food budget. Found in any grocery store, they are typically inexpensive.

You can find fancy ones in an Indian or Hispanic specialty store that are dirt-cheap as well. Although many of the heirloom beans will cost more, they are worth it for their varied tastes and textures. In many of the recipes I have a cheaper bean listed first with a fancy bean substitute you can try as well. This way you can have some great beans for dinner no matter what your food budget is. The exceptions are the baked goods and desserts. Theres no need to spend extra money on heirloom beans when you arent going to taste them.

In fact, I use blander beans so they wont overwhelm the flavor. They excel at creating a moist baked good with little or no oil at all! In the majority of the recipes in this book, you can choose whether you want to cook your beans from scratch or use canned beans. Its more economical to use dried beans, but sometimes convenience wins out. I always have a drawer full of various common and heirloom beans, as well as cans of beans stashed in the pantry. Dried beans are much cheaper than canned and dont contain any additives, so they are my first choice. If you are going to use canned beans, buy organic if possible.

Some nonorganic canned beans have sweeteners, preservatives, coloring, and firming agents and are high in sodium. But you avoid most of that in the organic canned beans, though they still tend to contain a high amount of salt.

HOW TO COOK BEANS
All of the recipes in this book start with cooked beans unless otherwise noted, either homemade, using one of the methods that follow, or canned beans, which are ready as soon as you open the can. However, I do recommend that you rinse and drain canned beans before you use them. This washes off the tinny taste and extra salt and basically makes a healthier and tastier product for you to use as the base of your dish. One option when making these recipes is to cook your dried beans in a slow cooker the night before and then add the rest of your ingredients in the morning.

Or you can add your canned or precooked frozen beans in the morning. Its completely up to you. Whenever I offer a slow cooker option, use one that has a 4-quart (3.8-L) capacity, unless otherwise noted. Some people have an easy time digesting beans and other high-fiber foods, but others end up having a harder time. Most people digest beans better by adding them gradually to their diet. But you can also try things like cooking beans with traditional herbs that are said to help or use some of the soaking methods.

The most important thing is that you find what works best for your body. I will tell you that I think different digestive systems respond better after beans have been soaked or cooked using a particular method. So go ahead and stick with your method if you have a sensitive system and have already found that it works for you. It is very important to cook beans all the way. Beans that are half-done or not soft enough will give everyone a stomachache, so err on the side of caution. (And, of course, there is an exception to every rule.

Indians use a raw, skinned, split black lentil called urad dal as a seasoning. These are only stir-fried, making them crunchy, similar to nuts.) The Very First Thing to Do: Inspect and Rinse You may think that grocery store beans are triple-cleaned beans and forget to look through your beans and rinse them. This is not a good ideaever. With many beans there are tiny rocks and other small debris that could cause a visit to the dentist. If that happens, it will take the thrifty right out of your beans! Measure your beans and then pour them out on one side of a clean counter or cutting board. Move them a few at a time to the other side while looking for small rocks, odd-looking beans, and anything thing else that doesnt belong in your cooking pot.

Then give them a quick rinse in a colander to remove any dust or dirt. To Soak or Not to Soak? Mexicans tend not to soak beans before cooking, while Indians almost always do. Some people soak to make the beans more digestible, and others soak merely to cut down on the cooking time. It is thought that oligosaccharides are responsible for the gas issues associated with eating beans. Oligosaccharides are indigestible, short molecular chains of sugars that are stored in the outer coatings of legumes, nuts, and seeds. Soaking beans overnight and getting rid of the cooking water as well as the soaking water is thought to get rid of these unwanted side effects.
