I am so happy to be bringing you a book called Sprinkles! How could I not be? Sprinkles are all about delightwith their color, sweetness, and little bit of crunch, they bring a visible layer of joy to everything they adorn. Sprinkles make the world a better, more rainbowlicious place. They exist, pure and simple, to make happiness.
But the world of sprinkles is far from simple. From the nearly microscopic to the size of a peanut, the term sprinkle encompasses all things cute and sweet, in every shape you can imagine. The power of sprinkles is anything but superficial. Whether its a host of multicolored sequins showered on a slice of fairy bread or one perfectly placed drage topping off a cupcake, a sprinkly sheen on a sweet treat can change everything. And the best part is, you dont have to be a pastry chef to play with sprinkles. With a few of the fun tricks in this book up your sleeve, youll be whipping up sprinkle-studded goodies in no time.
This book is all about using the beauty of sprinkles to unleash your creativity. The recipes and how-tos are also great for kids and families who want to cook together. But above all, Sprinkles! is a true community effort. We saw the amazing ways that people use sprinkles, and then we incorporated some of those ideas into this book. But wed love to see more!

The sprinkles of my youth were the classics. Tiny, colorful little beads of rainbow jimmies I scooped up by the handful and poured into my mouth before getting caught. (Sorry, Mom. It was worth it!) But times have changed. Thanks to todays cupcake-crazed society, a vast world of sprinkles has emerged. Heres a guide to identifying and baking with them, from the classic to the exotic.
Sprinkles: These are small bits of confectionery whose sole purpose is to add texture, decoration, and fun to baked goods and sweets. The generic term sprinkles usually refers to the ball- or rod-shaped opaque sugar pieces, whereas the word dcoratif can refer to anything that decorates the surface of a sweet. Sprinkles are typically manufactured using the extrusion method, in which a sugar-starch mixture is squeezed through tiny holes into long strands. The strands are then tossed in a circular or oval pan mounted on an angled, spinning post to break them into small pieces called vermicelli (literally little worms). After a glaze of a light sugar syrup, the batch of sprinkles is sifted to remove oversized bits and then reglazed to add a little extra shine and crunch.
Jimmies: This American term for sprinkles was coined around the 1920s and refers only to the rod-shaped sprinkles, and sometimes specifically to chocolate ones, depending on whom you ask. Like traditional sprinkles, jimmies are typically manufactured using the extrusion method (see above).
Hagelslag (literally hailstorm): A Dutch variety of sprinkle popular for breakfast, traditionally made with chocolate but now available in vanilla and fruit flavors.
Nonpareils: The French name (literally not equal) shows just how indispensable pastry chefs find these minuscule ball-shaped bits of sugar and starch. Nonpareils are traditionally made in opaque white, but these days theyre available in single- or multicolored mixes. (The name is also used for a chocolate drop candy thats made with these sweet tiny beads; for the .)
Hundreds and Thousands: An alternate name for sprinkles in the United Kingdom, Australia, and New Zealand, hundreds and thousands usually refers to the round, multicolored sort (see ).
Drages: In French, drage refers specifically to a sugar-coated almond, but the term in English means any kind of small confectionery with a hard shell made by panning an edible center in candy coating.
Panned Chocolate: Small disks of chocolate are coated with a candy shell (this technology was invented by the U.S. military for easier transport of chocolate!). Think M&Ms and Smarties. Though most people love to eat these sweets on their own, many brands come in a variety of sizes for decorating.
Sixlets: These are larger (about 10 millimeters in diameter) candy-covered chocolate-flavored balls that come in a variety of colors and are available in matte or pearl finish.
Metallic Drages: These elegant little sugar spheres, about 3 to 4 millimeters in diameter, are coated in a shiny finish (traditionally silver) for extra gleam. Though their silver coloring no longer contains mercury (as it did in the early 1900s), the U.S. Food and Drug Administration considers these to be inedible and for decoration only; however, other countries, like the United Kingdom, classify them as food items. Use your own best judgment.
