Unless otherwise noted, optional ingredients are not included, and when a recipe calls for multiple amounts, e.g., three to four garlic cloves, the lesser amount is computed. For nondairy milk, unsweetened almond milk was used in the calculation. Breads and buns are not included in the nutritional analysis (see packaging for that information). Sodium content is also not included because values are significantly different between brands and because the calculator tools have too much discrepancy with sodium values to provide a safe and reliable estimate.

Anytime my family comes together, a feast is sure to follow. Growing up, I loved holiday dinners crammed around my Aunt Carols extended table with my parents, grandparents, and all my aunts, uncles, and cousins. It looked a little like a scene from My Big Fat Greek Wedding, but that was us: elbowing each other and arguing over who got the last meatball.
Perhaps what stayed with me the most was how much care and love my grandmother and Aunt Carol put into every dish. For them, cooking was an expression of their love. They would slave away all day, sometimes a few days in a row, preparing an elaborate celebratory meal big enough to feed our large family.
I still vividly remember waking up to the smell of meatballs at 7:00 a.m. (yes, 7:00 a.m.!) because my grandmother was already working on our Christmas dinner. To this day, my Aunt Carol still gets up at around 6:00 a.m. to start cooking on major holidays. In my family, food is love and cooking is an expression of that love!
