The Moroccan cuisine is one of the best and famous cuisines around the world with its unique and remarkable flavors. The Moroccan cuisine in depth is the hugest combination of cultures in the whole world as it contains the Moroccan, Middle Eastern, French, Spanish, English, Portuguese, Roman culture...which made it so rich and surprisingly, one of the best.
Tagine is basically an old Moroccan original pot made of pottery and they used to cook the food in it on coals, but it managed to carve its way into the 21 century and take a place in every single Moroccan house and restaurant. It is almost impossible not to find at least one Tagine in a Moroccan house.
The mystery that made this pot popular all around the world is that it doesnt simply cook what you put in it like any other pot. The material it is made of adds its own flavor to it, which makes your food much more delicious and irresistible.
Many companies tried to create a modern version of the Tagine, but they ended up failing because the Tagine not only adds a special, tasty flavor to the food but it also absorbs the steam that comes off the food broth and allows it to simmer in a magnificent way. When you cook your food in it, you will notice that broth reduces and thickens so you dont need to allow your food to simmer after you cook it; it is a normal part of the Tagines process of cooking, unlike the so-called modern Tagines that are usually made of steel or aluminum
Because Moroccans are famous for their incredible Tagines, I couldnt help myself from introducing you to some of these amazing recipes, which are 100% original. So whether you have had a chance to visit Morocco or not, these recipes will make you feel like you are there and Im sure you will fall in love with them like everyone does.
Sweet Chicken and Pears Tagine
The sweetness and the combination of the caramelized pears with chicken make this recipe absolutely irresistible.
Serves: 4 to 6
Ingredients:
- 1 whole chicken
- 2 sliced pears
- 2 sliced onions
- 125 ml water
- 30 g butter
- 7 tablespoons olive oil
- 1 bunch chopped coriander
- 3 cinnamon sticks
- 2 tablespoons honey
- 2 tablespoon minced fresh ginger
- 2 bay leaves
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1 teaspoon ground coriander
- 1/5 teaspoon black pepper
Directions:
- Saut the onion with 2 tablespoons of olive oil in a pan until it softens then place it in the bottom of Tagine.
- Cut the chicken into pieces then place in a big bowl.
- In a small bowl, mix the turmeric with the ground coriander, salt, and 5 tablespoons of olive oil, then mix them well and rub the chicken pieces with the marinade.
- Place the chicken on top of the onion in Tagine and top it with cinnamon sticks then crush the bay leaves and sprinkle them on top.
- Add the fresh coriander with water and ginger.
- In a preheated frying pan, heat the butter then caramelize it with the sliced pear and honey for almost 5 minutes or until you are satisfied.
- Preheat the oven on 170 C and allow the Tagine to cook in it for 50 minutes.
- Once the time is up, add the pears to the Tagine and cook them for another 10 minutes.
- Pour the sauce of the caramelized pear on top then serve it warm and enjoy.
Couscous and Apricot Tagine
Serves: 6
Ingredients:
- 785 g skinless and boneless chicken, cut into chunks
- 300 ml chicken broth
- 250 ml boiling water
- 175 g couscous
- 50 g dry raisins
- 2 thinly sliced onions
- 65 g dry apricots
- 2 tablespoons flour
- 2 tablespoons lemon juice
- 2 tablespoons tomato pure
- 1 teaspoon cinnamon powder
- 1 teaspoons ground ginger
- 1 teaspoons ground cumin
- teaspoon freshly ground black pepper
- teaspoon curry powder
Directions:
- In a slow cooker, combine the raisins with chicken, apricot, and onion then set them aside.
- Mix in a small bowl, mix the rest of the ingredients except for the boiling water and couscous then pour it on top of the chicken and the other ingredients then allow them to cook on low heat for 5 hours.
- Once the time is up, place the couscous in a bowl then pour on top of it the boiling water and allow it to rest for 5 minutes.
- Serve the chicken Tagine alone with some bread or with the couscous then enjoy.
Chicken Tagine with Veggies
The recipe is so full of flavors, especially when you eat it with Moroccan bread. All you want to do is to dive in it.
Serves: 6
Ingredients:
- 2 chicken breasts, cut into chunks
- 400 g chickpeas
- 400 g chopped tomato
- 1 butter squash, chopped
- 1 carrot, chopped
- 1 potato, chopped
- an onion, chopped
- 3 cloves of garlic, minced
- 1 tablespoon vegetable oil
- 400 ml vegetable broth
- 1 tablespoon lemon juice
- 1 tablespoon granulated sugar
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1 teaspoon black pepper
Directions:
- In a preheated pan, heat the oil then brown in it the onion with garlic for 5 minutes.
- Once the time is up, place all the ingredients in a Tagine, starting with the onion and garlic, chicken, veggies, then sprinkle the rest of the ingredients on top and if you dont have a Tagine, you can use a slow cooker instead.
- Allow them to cook for almost 1 hour and 15 minutes until the veggies and chicken become tender.
- Serve it warm with any kind of bread and enjoy.
Spicy Goat Meat
You can serve this dish in a traditional Moroccan way by placing the broth first in a large serving dish then top it with goat meat followed by the onion and tomato mix right on top of it. Or you can simply cut the meat into suitable bite sizes and mix it with its broth then serve with it with the onion and tomato mix beside it. You can also serve the goat meat alone.
