What is an Electric Pressure Cooker?
The History of Pressure Cooking

The first attempt to use steam to reduce the time taken to cook was made in the year 1679 by French Physicist Denis Papin. Paipin invented a device known as the steam digester which worked on a principle similar to the pressure cooker that we use today. He devised an airtight cooker that worked by increasing the boiling point of water using steam. This resulted in faster cooking. Unfortunately, this benchmark in cooking technology was not considered a scientific study when he presented it to the Royal Society of London. It was only much later that he was accepted as the member of this society.

The earliest known pressure cookers were manufactured by George Sutbrod in Stuttgart in 1864. He made pressure cookers out of cast iron. Although there were so many initial designs and concepts presented with regard to pressure cooking, the first patent for pressure cooking was received in the year 1919. It was granted to Jose Alix Martinez by Spain. It was named olla express which when translated means express cook pot.

Pressure cookers became available for home use only in 1938 when Alfred Vischler designed the Flex Seal Speed Cooker in New York City. Vischler presented this design as the first pressure cooker specifically designed for safe use at home. The pressure cooker received a lot of success which set European and American Manufacturers after it. The first pressure cooker manufactured for home use was unveiled at the New York Worlds Fair at 1939. It was presented by the National Presto Industries which was then known as the National Pressure Cooker Company. This was the first company to manufacture its own pressure cookers.

Pressure Cookers and the World War

It was when America was about to enter the Second World that manufacturing of pressure cookers came to a standstill. During this period any facility that was meant for civilian use was converted to make way for war production. While cookers were not manufactured anymore, canners became more and more popular commercially. The GIs overseas began to demand for more commercial pressure canners during this time.
