Molasses Sugar Cookies
Servings: 72 cookies
Ingredients:
-1 1/2 cups shortening
-2 cups white sugar
-1/2 cup molasses
-2 eggs
-4 cups all-purpose flour
-4 teaspoons baking soda
-2 teaspoons ground cinnamon
-1 teaspoon ground cloves
-1 teaspoon ground ginger
-1 teaspoon salt
Preparation:
1. Melt the shortening on the stove or in the microwave. Let cool.
2. Stir sugar, eggs, and molasses into melted shortening.
3. In another bowl, sift together the dry ingredients. Add to wet ingredients. Then mix well and chill several hours or overnight.
4. Preheat oven to 375 degrees F. Grease cookie sheets.
5. Form dough into 72 balls about the size of a rounded tablespoon. Roll in granulated sugar or colored sugar. Place 2 inches apart on cookie sheets. Bake for 8-10 minutes.
6. Let cookies cool on a wire rack. Store in an airtight container.
Calories: about 93 per cookie
Peppermint Oreo Cookie Balls
Servings: 48 balls
Ingredients:
-6 candy canes, finely chopped, divided
-8 oz softened cream cheese
-36 Oreo cookies, finely crushed
-16 oz semi-sweet baking chocolate, melted
Preparation:
1. Mix all EXCEPT 1 TABLESPOON of the chopped candy with the cream cheese and the cookie crumbs.
2. Shape into 48 balls (about 1 inch each). Freeze for 10 minutes and then dip balls in melted chocolate. Place each dipped ball on waxed baking sheet and sprinkle with reserved candy. Refrigerate for at least 1 hour until firm.
Calories: approximately 110 per ball.
Peppermint Meltaways
Servings: 42 cookies
Ingredients:
-1 cup butter, softened
- cup confectioners sugar
- teaspoon peppermint extract
-1 cups all-purpose flour
- cup cornstarch
For Frosting:
-2 tablespoons butter, softened
-1 cups confectioners sugar
-2 tablespoons 2% milk
- teaspoon peppermint extract
-2-3 drops red food coloring
- cup crushed peppermint candies
Preparation:
1. Preheat oven to 350 degrees F.
2. Cream butter and confectioners sugar in a small bowl until light and fluffy. Beat in extract, cornstarch, and flour and mix well.
3. Shape into 1 inch balls about 2 inches apart on ungreased cookie sheets. Bake for 10-12 minutes or until lightly browned on the bottom. Remove cookies from sheets to cool on wire racks.
4. For frosting: beat butter in a small bowl until fluffy. Add confectioners sugar, milk, extract, and food coloring. Beat until smooth. Spread on cookies and sprinkle with crushed candies.

Candy Bar Cookies
Servings: 24
Ingredients:
- tube refrigerated sugar cookie dough, softened
- cup all purpose flour
-24 mini Snickers candy bars, or other mini candy bars
-Red and green colored sugar
Preparation:
1. Preheat oven to 350 degrees F.
2. Beat cookie dough and flour until combined. Unwrap candy bars and shape a small amount of dough around each bar.
3. Roll in sugar and place 2 inches apart on greased cookie sheets. Bake for 10-12 minutes until edges are lightly browned. Cool on wire racks.
Calories: about 93 per cookie.
Split Second Cookies
Servings: 30 cookies
Ingredients:
- cup butter, softened
-2/3 cup sugar
-1 egg
-1 teaspoon vanilla extract
-2 cups all-purpose flour
- teaspoon baking powder
- teaspoon salt
-1/3 cup raspberry jam, or preferred flavor.
Preparation:
1. Preheat oven to 350 degrees F.
2. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, combine flour, baking powder, and salt. Gradually add to creamed mixture and mix well.
3. Divide dough into four equal portions. Shape each portion into a 12 inch log about inch thick. Place a few inches apart on two greased baking sheets.
4. Make a inch depression down the center of each log and fill the depression with jam. Bake for 15-20 minutes until golden brown.
5. Cool for 2 minutes and cut into diagonal slices about inches thick. Cool on wire racks.
Calories: about 99 per 2 cookies.
Cinnamon Stars
Servings: 3 dozen cookies
Ingredients:
-2 2/3 cups finely ground almonds
-1 tablespoon ground cinnamon
-1 teaspoon lemon zest
-1/3 cup egg whites
-1/8 teaspoon salt
-2 cups confectioners sugar
-1 teaspoons lemon juice
Preparation:
1. Preheat oven to 325 degrees F and grease cookie sheets or line with parchment paper.
2. Stir together almonds, cinnamon, and lemon zest.
3. In another bowl beat egg whites with salt until soft peaks form. Slowly sift in confectioners sugar and continue to beat until stiff. Set aside 1/3 cup of the egg mixture. Fold almond mixture into remaining egg mixture.
4. Dust your work surface with confectioners sugar. Roll dough to inches thick. Cut out star shapes or other shapes using cookie cutters and place on cookie sheets.
5. Make the glaze by adding lemon juice to reserved egg mixture and stirring until smooth. Lightly glaze cookies with this mixture.
6. Bake for 20-25 minutes until light brown and soft in center. Cool on wire racks.
Calories: about 190 per cookie.
