Buying Ingredients O ne of the essentials of cooking like a Jamaican is to cook with the right ingredients. It is important to know that some brands may play a minor (or sometimes major) role in the outcome of your dishes. Among some of the most respected brands are Grace, Linstead Market and Walkerswood . Fortunately, whether you are living in Jamaica or not, buying these ingredients will be quite easy. These ingredients can be found in most food stores or supermarkets and also online. A host of Jamaican food products can be found on Amazons website.
Just do a simple search on Amazon for a particular product and you can easily find them. Christmas Plum Pudding Baking Time: 2 hours Ingredients 750 grams raisins and mixed peel or mixed fruits 3 cups red wine cup white rum 1 cup stout* 1 tablespoon vanilla essence 1 teaspoon rose water flavoring 2 teaspoon almond flavoring 500 grams soft margarine or butter 500 grams brown sugar 1 teaspoon lime/lemon rind 6 medium eggs 500 grams flour 125 grams breadcrumbs 2 teaspoons baking powder 1 tablespoon cinnamon powder 2 tablespoons browning 1 cup red wine cup white rum *Stout is any strong dark beer (almost black) made from roasted barley *Browning is a dark liquid made from mainly caramel and water and is used as a coloring agent in some Jamaican dishes. Directions
- Blend all fruits with wine. Boil for 2-3 minutes and allow to cool.
- Add almond flavoring, white rum, stout, rose water and vanilla essence.
- Combine butter or margarine and sugar until a light and fluffy texture is achieved,
- Add in eggs one each time while mixing well after each egg is added. Then add lime or lemon rind.
- Combine and sift all dry ingredients.
- Add flour and fruits alternatively to the creamed mixture. Stir in browning and pour into two greased and covered pans.
- Steam for 1 hour at 180 C/350 F.
Then reduce temperature to 150 C and steam for another 1 hours.
- Remove from the oven and allow to cool. Combine red wine and white rum and pour evenly over cakes.
- Serve with Butter Brandy Sauce.
Ingredients for Butter Brandy Sauce cup margarine or butter 1 cup icing sugar 3 tablespoons brandy Directions for Butter Brandy Sauce
- Cream together margarine or butter and icing sugar until light and creamy, then add (beat in) brandy.
- Chill well and serve with pudding.
Black Christmas Cake
Baking Time: 2 hours 45 minutes Ingredients 2 ounces bread crumbs 4 medium eggs 8 ounces butter/margarine 8 ounces brown sugar 6 ounces Flour 1 pounds mixed fruit 1 teaspoon cinnamon pounds mixed spice teaspoon salt 1 teaspoon baking powder 2 teaspoons vanilla essence 2 tablespoons browning teaspoon rose water flavoring (optional) teaspoon almond essence Wine and white rum to taste Grated rind of 1 lime or of a lemon Directions
- Cream butter and sugar until fluffy
- Add one egg each time to the butter and sugar blend, beating well after each addition.
- Sift all dry ingredients and pour into butter and cream mixture, alternatively with the wine and fruits as well as the grated rind of lime or lemon.
- Add browning, vanilla, almond essence and rose water to this mixture.
- Pour mixture into greased and/or lined baking tin and bake at 300F for 1 hours and then at 275F for a further 1 hours.
Special Fruit Cake
Ingredients pound margarine pound dark sugar 4 medium eggs 1 teaspoon vanilla/almond flavoring 1 pound cake or pastry flour 1 tablespoon baking powder cup breadcrumbs 2 teaspoons mixed spice/nutmeg 1 tablespoon browning 3 cups fruit wine 1 cup rum 3 cups soaked mixed fruits cup cherries cup crushed peanuts Directions
- Combine margarine and sugar. Cream together until the mixture becomes light and fluffy.
- Gradually beat in eggs one at a time. Stir in vanilla or almond flavoring.
