Jerk Pork
This Jerk pork recipe is definitely a must-try.
Serves: Time: 1 hr. 33 mins. Ingredients:
- Pork (1 lb., 1 in cubes)
- jerk marinade or mild jerk sauce (1/3 cup)
- lemon juice (1 tablespoon)
- sugar (1 tbsp)
- salt (1 pinch)
Directions: 1. Preheat oven to 350F. 2. Press pork by taking a plate and lining with paper towels.
Follow by placing pork blocks on the paper towel and then place some paper towels on top of the blocks as well. 3. Place another plate on top of paper towel and pork blocks and add 2 cans or other heavy items on top of the plate for about 25 minutes. 4. Mix marinade, sugar, salt, and lemon juice together in a bowl. 5.
Brush the pork with jerk marinade or sauce, sugar, salt, and lemon juice 6. Grease or line a baking sheet. Bake for about 45-60 mins. Serve with rice.
Semola Porridge

Ingredients:
- semola ( cup)
- water (2 cups)
- salt ( tsp)
- sugar (4 tbsp)
- coconut milk ( cup)
- vanilla (1 tsp)
- cinnamon (1 tablespoon)
Directions: 1. Mix semola with a little of the water. 2. Add Bring the remainder of the water to a boil and add the semola and salt. 3. 4. 4.

Mango Passion Fruit Drink

- Mangoes (diced)
- water (1 )
- vegan sweetener (1 teaspoon)
Directions: 1. Cut passion fruit into two, horizontally in the middle. Remove the pulp by scooping the middle with a spoon. 2. 3. 3.
Add sweetener, water and blend well with water. 4. Filter through a metal strainer to remove the seeds of passion fruit into a pitcher.
Gungo Peas Soup
Even though this recipe is vegan-friendly it can definitely be enjoyed by everyone. Serves: Time: 1 hr. 30 mins.
Ingredients:
- gungo peas (2 cups dry red)
- garlic (2 cloves, grated)
- salt ( teaspoon)
- black pepper ( teaspoon)
- nutmeg ( teaspoon, grated)
- water (8 cups)
- pimento berries (6, crushed)
- coconut milk (1 can)
- carrot, peeled and diced
- Irish potatoes (2 large, diced)
- zucchini or cho-cho (chayote) (1 medium, diced)
- sprig thyme (1)
- scallion (2 stalks, crushed)
- Dumplings/Spinners: (optional)
- all-purpose flour (1/2 cup)
- salt (1/8 tsp)
- water (as needed)
Directions: 1. Pour water into a pot. Add in your red gungo peas, pimento berries and crushed garlic then boil until the beans are tender. 2. Pour in the zucchini, potatoes, carrots and coconut milk. To make the dumplings/spinners: 3.
Mix the flour with a dusting of salt. Add a little water at a time until a soft dough is formed. 4. Roll the dough bits between your palms, making the ends softly tapered. Add to the soup pot. 5.
Cook for 1 hour. Add the thyme, nutmeg, crushed scallion, salt, and black pepper and simmer for about 10 minutes.
Sweet Potato Fritters
This delicious fritter makes the perfect afternoon snack. Serves: Time: 20 mins. Ingredients:
- sweet potato (4 1 / 2 cups, cooked)
- flour (1 cup)
- baking powder (1 tbsp)
- onion (1 medium)
- thyme (1 sprig)
- scallion (1 stalk)
- water
Directions: 1. 2. 2.
Add water and mix together until a soft dough is formed. 3. Add oil to a frying pan. Heat with medium heat to the pan 4. Place a spoonful of batter into heated oil, flatten with the back of a spoon. 5.
After that side changes to a golden-brown color, flip over and fry the other side until also golden-brown in color. Repeat with remaining batter. Drain on a paper towel and serve.
