Blueberry Muffins
These muffins are simple to make and come out absolutely delicious every time.
Serves: 8 Muffins
Time: 10 mins.
Ingredients:
- 1/3 cup oil (vegetable, canola or coconut)
- 1/3 cup whole milk
- 1 large egg
- 1 tsp vanilla extract
- cup sugar
- 2 tsp baking powder
- tsp cinnamon
- 1/8 tsp nutmeg
- 1 cups flour
- tsp salt
- 1 cups blueberries
Directions:
1. In a large bowl, combine the baking powder, sugar, cinnamon, nutmeg, flour and salt. Whisk together well.
2. Add the egg, vanilla, whole milk and oil to the bowl and whisk your ingredients together until smooth.
3. Fold in the blueberries.
4. Scoop the muffin batter into a regular-sized muffin tin with paper liners, filling each cup about of the way to the top.
5. Bake at 400 F (20 to 24 minutes). Allow to cool then serve!
Strawberry Lemonade Muffins
These muffins are the perfect summertime treat.
Serves: 8 Muffins
Time: 10 mins.
Ingredients:
- 1/3 cup oil (vegetable, coconut or canola)
- tsp salt
- 1/3 cup whole milk
- 1 large egg
- tsp baking soda
- 1 Tbsp lemon juice
- 1 tsp lemon zest
- cup sugar
- 2 tsp baking powder
- 1 cups flour
- 1 cups chopped strawberries
Directions:
1. Combine the baking powder, sugar, flour, and salt. Whisk together well.
2. Add the egg, lemon juice, lemon zest, whole milk and oil to the bowl and whisk your ingredients together until smooth.
3. Fold in the strawberries.
4. Scoop the muffin batter into a regular-sized muffin tin with paper liners, filling each cup about of the way to the top.
5. Bake at 400 F (20 - 24 minutes). Allow to cool then serve!
Raspberry Muffins
Warm raspberries in the middle of a sweet muffin are like a baking dream come true.
Serves: 8 Muffins
Time: 10 mins.
Ingredients:

- 1 large egg
- 1 tsp vanilla extract
- cup sugar
- 2 tsp baking powder
- tsp cinnamon
- 1/8 tsp nutmeg
