Salmon and Onion Frittata
Pacific Northwest salmon makes this an especially interesting and delicious breakfast.
Serves:
Time: 1 hr. 10 mins.
Ingredients:
- olive Oil (4 tbsp.)
- medium onion (1/4 chopped)
- Kosher salt and ground pepper (as desired)
- salmon, pepper-smoked (4 oz.)
- black olives (8 chopped)
- eggs (6 large)
- milk, 2% (2 tbsp.)
- cream, heavy (2 tbsp.)
- cream cheese (4 oz., cubed)
Directions:
1. Preheat oven to 350F.
2. Heat oil in oven-safe, 8 skillet on med. heat. Add the onion. Season as desired. Stir while cooking till onion is translucent.
3. Add olives and salmon. Stir while cooking again, briefly, so the flavors are released.
4. In medium-sized bowl, whisk milk, cream and eggs together. Pour this over onion and salmon and gently stir.
5. Scatter cream cheese cubes on top. Cook on med. heat and dont stir this time, till edges become firm.
6. Place skillet in 350F oven. Bake for 18-20 minutes, till puffed and browned nicely.
7. Flip on serving plate. Wedge-cut and serve.
Salmon Dill Sauce
Fresh salmon is so tasty, and its an excellent base for a great recipe.
Serves:
Time: 35 mins.
Ingredients:
- salmon fillet (1 x 2-lb.)
- lemon-pepper seasoning (1 to 1 1/2 tsp.)
- lemon, fresh (6 slices)
- onion salt (1 tsp.)
- small onion (1 sliced, separated in rings)
- butter, unsalted (1 cup of cubed)
For the dill sauce:
- sour cream, low fat (1/3 cup)
- mayonnaise, light (1/3 cup)
- onion (1 tbsp., chopped finely)
- lemon juice (1 tsp., fresh)
- horseradish (1 tsp., prepared)
- dill weed (3/4 tsp.)
- garlic salt (1/4 tsp.)
- Ground Pepper (as desired)
Directions:
1. Line 10x15x1 baking pan using foil. Grease it lightly. Place the salmon on the foil with skin side facing down.
2. Sprinkle salmon with onion salt and lemon pepper. Top with lemon and onion.
3. Dot it with butter. Fold the foil around the salmon and tightly seal.
4. Bake for 18-20 minutes at 350F. Carefully open foil to vent steam.
5. Broil four to six inches from heat for eight to 12 minutes, till fork flakes fish easily.
6. Combine sauce ingredients till smooth. Serve it with the salmon.
Flounder Eggs
This is an unexpected dish, and so exotic.
Serves:
Time: 25 mins.
Ingredients:
- butter, unsalted (3 tbsp., melted)
- flounder fillets (2 x 8-oz., skinless, boneless)
- kosher salt (3/4 tsp.)
- paprika (1/2 tsp.)
- Grounded black pepper (as desired)
- eggs (4, large)
- Optional: green onions, (3 tbsp., chopped)
- parsley, (3 tbsp., chopped)
- capers, (1 1/2 tbsp. drained and chopped)
Directions:
1. Preheat the oven to 400F. Pour the butter in 9x13 baking pan (metal works best).
2. Place the fish in baking pan. Turn and coat it with the butter. Season using 1/2 +/- of your kosher salt paprika and a good amount of ground pepper.
3. Bake for two to four minutes. Add eggs to the corners of the pan.
4. They should be beside the fish, rather than on top.
5. Season the eggs using the rest of your paprika and salt and then more pepper.
6. Bake fish till barely opaque, with eggs set lightly. This usually takes seven or eight minutes.
7. Combine capers, green onions and parsley if you are including them.
8. Transfer the eggs and fish to individual plates. Use the caper mixture to garnish, then serve.
Shrimp Grits
This recipe hits the spot if you are hungry for low country breakfast food.
