Makes 4 Servings

Ingredients:
- 4 x 6-oz. fillets of salmon with skin removed
- 1 sliced fennel bulb, small
- 2 tbsp. of lemon juice, fresh
- cup of crme frache
- cup of chopped dill, fresh
- 1 lbs. of potatoes, new
- 3 tbsp. of mustard, Dijon
- Salt, kosher
- Ground pepper
Instructions:
1. Adjust the rack of your oven to 6 below the heat source and heat the broiler.
2. Place potatoes in large pot, covered with cool water. Bring to boil. Add a tsp. of salt and reduce heat. Simmer until the potatoes are tender. Drain them and run under cool to cold water. Cut them into quarters.
3. Combine tsp. of pepper, 1 tsp. each of salt lemon juice, and crme fraiche. Stir in fennel and potatoes.
4. Place salmon on a cookie sheet lined with baking paper.
5. Combine the rest of the lemon juice with mustard in small bowl. Spread on top of salmon.
6. Broil salmon until the entire fillets are the same color.
7. Divide salmon and the salad on individually sized plates. Sprinkle with dill. Serve.
2 Lemon Pepper Tilapia
This dinner allows your family to enjoy flavorful tilapia, which is seasoned with lemon and spices, in a short amount of time. You can serve it with a salad, fruits or veggies.

Ingredients:
- 1 lb. of tilapia fillets
- 1 pkg. of dill lemon pepper seasoning
- 1 tbsp. of oil, olive
Instructions:
1. Preheat the oven to 450F.
2. Pour seasoning into a shallow dish. Brush the fish with olive oil. Coat the fillets on both sides lightly with the seasoning mix.
3. Place the fish in one layer on a lined cookie sheet. Bake until the fish will flake with a fork easily. Serve.

- 4 x 6-oz. skinned fillets of sole
- 1 tbsp. of oil, olive
- cup of cucumber, chopped finely
- 2 cups of cherry tomatoes, quartered
- 1 tsp. of salt, kosher
- tsp. of black pepper, ground
- 2 tsp. of fresh lemon rind, grated
- 1 tbsp. of vinegar, balsamic
- 1 tbsp. of shallots, chopped
- 2 tbsp. of capers
- 3 tbsp. of fresh basil, chopped
- 1/3 cup of bell pepper
Instructions:
1. Combine tomatoes, cucumber, pepper, basil, capers, shallots, lemon rind and vinegar in medium bowl. Add tsp. of salt 1/8 tsp. of pepper and stir.
2. Heat the oil in a large skillet on med-high. Sprinkle the fish with a pinch of salt pepper.
3. Add the fish to skillet. Cook until the fish will easily flake with a small fork.
4. Serve the fish with salsa.

- 1 lb. of shrimp, deveined peeled
- 1 cup of tomato sauce
- 5 cups of stock, chicken

- 1 lb. of sausage links, Italian, hot

- 4 minced garlic cloves
- 3 chopped bell peppers 1 each yellow, red and green
- 1 chopped onion, medium
- 3 cups of rice, long grain, uncooked
Instructions:
1. Heat oil until it shimmers, on med-high in large pot. Add sausages. Turn often while cooking until the sausages cook through. Remove sausages to plate. Tent using foil.
2. Add peppers, rice and onion to drippings. While cooking, scrape up browned bits in pan, until onions become translucent and rice is opaque. Add spice mix and garlic. Cook for another minute.
3. Add tomato sauce and stock. Stir to combine. Bring to boil. Turn heat down, then cover pan. Simmer for about 10 minutes.
4. Slice sausages on an angle. Then add shrimp and sausages to pot. Cover and cook for 10 more minutes over low heat until rice becomes tender and shrimp is completely cooked. Serve hot.
