Fish Soup and its Rust Mayonnaise
You cannot miss starting this cooking book with the famous French fish soup. This is a very easy way of doing it, just like my mum is making it. There is no specific season to eat this soup you will enjoy it both during winter and summer. You will also discover that it is so good for young children who have difficulties of eating healthy food.

Preparation Time: 1hour 20 minutes
INGREDIENTS:
2.2 lbs. of various fish (cod, mullet, sea bream, rockfish, monkfish, etc.)
2 onions, chopped
3 tomatoes, cut in large cubes
2 garlic cloves, chopped
1 bouquet garni, thyme, rosemary and bay leaf
3 pinches saffron
1 pinch paprika
4 tablespoons olive oil
Salt and pepper
Rouille Mayonnaise rust
2 eggs yolks
2 garlic cloves, crushes
1 teaspoon of mustard
olive oil, depends how much you need
1 pinch saffron
1 pinch paprika
4 slice of bread, cut in pieces for the croutons
METHOD:
Clean the fish and cut into large pieces.
Put the olive oil in a large pot to warm up.
Fry and sweat the onion.
Add the fish, tomatoes, garlic, saffron, and the bouquet garni. Season.
Cover with hot water, bring to the boiling stage and cook for 45 minutes.
After 10 minutes of cooking, reserve a few pieces of fish that you will crumble for garnish.
When the cooking is finish blend everything.
Put the egg yolks in the mixer bowl, add the mustard and season.
Whisk while gradually adding the oil.
Add the saffron, crushed garlic, and paprika.
Rise as a mayonnaise and it will become a rouille.
Serve the soup with some toasted bread rubbed with garlic and add the rouille mixture on the top of the croutons.
Tips:
You can add some grated cheese too when you serve the soup.
Fish Terrine

Rapidly cook watercress in butter so that it loses its water.
Add the shallot and fish in the blender.
Add the cream, 1 whole egg, and 2 white eggs.
Mix all and season.
Peel the prawns. Keep 2 or 3 for the decoration.
Cut them into small pieces.
Grease cake mold.
Put half of the mixture and add the prawns, then the rest of the stuffing as well.
Cover with foil.
Bake in a Bain Marie - water bath in an oven at 350 F for about 40 minutes.
Let cool it down and put in refrigerate overnight.
Two Salmon Rillettes with Cream Cheese

INGREDIENTS:
2 salmon fillets
3 fine slice of smoked salmon
cup of cream cheese
teaspoon lemon juice
2 teaspoons dill, chopped
cucumber, cut into small cubes
Salt and pepper
METHOD:
Boil a pot of water.
Plunge the fresh salmon and poach for 15 minutes.
Drain, remove the skin and finely crumble the meat with a fork. Cool it down.
Meanwhile finely chop the smoked salmon.
Pour the crumbs of salmon and cream cheese in a bowl.
