ACKEE AND SALT-FISH
WITH ROASTED BREADFRUIT
The ackee is a yellowfruit with a black hard seed on the top. It is big as your thumb andusually they come three fingers to a pod. The fruit is uniquely dangerous,people cultivate when it is ready.
If you buy ackees from the market, besure you can see the ackees split open in their pods. Usually there are three ackeesto a pod, sometimes two. If you force the pod, open yourself. That makes itdangerous to eat. It is important the ackees pod split open naturally on thetree. Alternatively, use the canned ackee.
Thebreadfruit is a large round green fruit. They are large as a basketball orlittle like the grapefruit. People harvest to roast after fit or ripening. Thefruit grows on a tree as big as oak tree.
Jamaicansroasts the breadfruit over wood fire or on the stove.
Ackee andcodfish with roasted breadfruit is Jamaica's national dish. I knowwhy. This dish is flavorful and delicious.
