Foodie goes Primal A Low Carb Cookbook by Heidi Visser Kindle Edition Copyright 2016 Heidi Visser TABLE OF CONTENTS: Introduction I am thrilled to share my blog in cookbook form with you. It all started with my passion for food I come from a foodie family; a cousin and my brother both professionally trained chefs; my dad has worked with one of SAs top chefs and has been in the restaurant industry for most of his life. Growing up, Ive always been exposed to new and different food, never really following the norm. Weve also travelled a lot and Ive experienced some very interesting and fabulously exotic food from different cultures. Recently my passion for food and eating it has evolved into a passion for eating well; enjoying food that not only satisfies the soul, but also nourishes the body in a healthy and nutritious way. All my recipes are low carb, or LCHF {Low Carb High Fat} and most of them also Paleo, as this is how we eat at home.

This is not a diet book, nor is it a book that aims to give nutritional guidance or eating plans, it is a source of fabulous, easy to prepare and family-friendly LCHF meals. This book is all about the enjoyment of food in its real form and to show you that you can eat well and healthy without compromising on taste or pleasure. All the dishes are low carb and real nothing processed; no sugar, wheat or other nasties. Our own personal diet or rather lifestyle stems from a combination of following a Paleo, Primal and LCHF lifestyle. We want to feel good and be healthy and still enjoy food! I hope you enjoy this book and all of my recipes. Heidi X Acknowledgements I am so blessed to have so many wonderful and supportive people in my life, but Id especially like to thank a few extra-special people: Thanks to my parents {Arno & Irene} who raised me to be a foodie.

Thanks for always making me try new things and for being adventurous eaters yourselves. Not only giving me this exposure, but also in believing in me and encouraging me even from a young age, as I flexed my entrepreneurial muscles selling all kinds of arts & crafts as a kid {I also really appreciate the fact that youre joining us on this healthier lifestyle path.} Thanks to my amazing husband {Eben} for always being a willing guinea pig and my biggest cheerleader! Thank you for your patience and funding of my projects. Thanks for believing in me. Thanks to my boys {Sebastian & Francois} who inspire and appreciate my food {most of the time} and patiently await dinner while I photograph away I hope my persistence will pay off and you will reap the benefits of a healthy lifestyle and a more experienced palate I know you will, and I hope you will continue appreciating it as you grow older. Thank you to all my friends who always inspire, encourage and compliment me, always making me feel like the best hostess!
For those that have given me some great recipe ideas and inspiration. Thank you also to each and every one of my friends and family that has encouraged me to write this book and to keep on doing my thing - you know who you are And last, but definitely not least, thank you to each of you who like my Facebook posts, my page and subscribe to my blog.

X BREAKFAST FIX
Triple Coconut Chia Pudding Breakfast Parfaits What a mouthful So have you ever tried chia seeds Well I was a bit - photo 1 What a mouthful! So, have you ever tried chia seeds? Well, I was a bit sceptic at first, and also not really sure about its status is it a seed, wheat, what is it? Well, it IS classified as a wholegrain, but is extremely low in carbs, as most of it is just fibre Its also very high in anti-oxidants, omega-3s and other good stuff! So, have it once in a while Chia seeds have a strange texture, kind of gel-like with a crispy centre. It sounds a bit different, but is actually quite good. They need to be soaked and will take on the flavour of the liquid its soaked in. So, here is my recipe for a scrummy Chia Pudding Breakfast Parfait: Servings: 4 You will need: 6 tbsp. chia seeds
1 tin {400 ml} coconut milk
1 tbsp. shredded coconut, unsweetened & toasted
2 tbsp. large coconut flakes, toasted
6 fresh, plump strawberries Mix the chia seeds, cocoa powder, xylitol and vanilla with the coconut milk and mix very well. {Using a Mason jar to mix works really well, as you can shake it up to mix properly and leave it in the fridge overnight.} Leave it in the fridge to soak overnight. {Using a Mason jar to mix works really well, as you can shake it up to mix properly and leave it in the fridge overnight.} Leave it in the fridge to soak overnight.

To serve, dish into small jars or a glass, layering it with the toasted shredded coconut. Top with 3 sliced strawberries each and a tbsp. of large coconut flakes. This is VERY filling, so its best as a breakfast really. A yummy, pudding-like breakfast ! Quick & Easy Low Carb Breakfast Bowls Seeing as breakfast is the most important meal of the day lets make it a good - photo 2 Seeing as breakfast is the most important meal of the day lets make it a good one, shall we? This one is quick, its easy and its really good! Once again using a few key, classic ingredients to create a really yummy meal. I have 2 {make that 3 hubby included} really demanding early birds at home they need food as their eyes open in the morning I dont always have nut granola on hand besides, they really love their eggs so I like to keep already-boiled eggs on hand.

Scrambled eggs can get a bit tedious and its always nice to mix things up a bit, plus Im always in favour of sneaking in some extra greens. Servings: 2 You will need: 1 packet of bacon {250 g}, cut into pieces
2 cups baby spinach
Butter
3 eggs, soft boiled
Chili, garlic & coriander butter {secret ingredient just mix in some fresh chilies, chopped coriander and crushed garlic with butter} Heat the {regular} butter and fry the bacon over a low heat. Add the spinach and just let it wilt down. Add the {special} garlic butter and let it melt into the spinach and bacon. Cut the eggs in half and serve it with the bacon & spinach. Season with salt.

There you go Super Mom in a flash! Birthday Breakfast Egg Cupcakes Our birthday tradition has always been to have tea cake early in the morning - photo 3 Our birthday tradition has always been to have tea & cake early in the morning, along with singing happy birthday and opening of gifts. These egg cupcakes are too cute and perfect for a quick breakfast bite. The kids love them and go to school with shiny, buttery faces when we have these! LOL {YOU try and get your kids squeaky-clean for school ha!} Servings: 4 You will need: 9 eggs
Pinch of salt
1/2 cup grated Mozzarella cheese
1/2 cup grated mature white cheddar
Butter to serve Prepare a muffin pan with 12 cupcake holders. Whisk the eggs and add salt and cheese. Divide the mixture between the 12 cups and bake at 180C / 325F for 20 minutes. Serve with a teaspoon of butter on top of each cupcake.

Steak n Egg Breakfast Pizza Let me just start off by confessing something I LOVE steak Sometimes I feel - photo 4 Let me just start off by confessing something: I LOVE steak. Sometimes I feel like I could eat an entire cow. {If Im offending anyone by my statement well, sorry} We all have chill-weekends those lazy ones where you spend most of it on the couch, watching TV or reading a book Everyone needs a weekend like that every once in a while in fact, at least one day a week should be spent like that! You just get to a point during the week where you have to press the reset button For days like that, I love to throw together a fab treat breakfast that will keep you satisfied, but thats still quite quick and easy to prepare. Kind of a pizza, kind of an open omelette {Lets call it a pizza I like the sound of that much better!} Servings: 2 extremely hungry people, or 4 semi-hungry people {Youre going to need some leftover steak, so this is perfect for the morning after a braai.} You will need: 1 onion, thinly sliced
