Classic Mac and Cheese
Prep time: 60 minutes Servings: Ingredients: 2 tablespoons butter 1/4 cup finely chopped onion 2 tablespoons all-purpose flour 2 cups milk 3/4 teaspoon salt 1/2 teaspoon dry mustard 1/4 teaspoon ground black pepper 1 (8 ounce) package elbow macaroni, cooked 2 cups shredded sharp Cheddar cheese 1 (8 ounce) package processed American cheese, cut into strips Directions:
  1. Set oven to 350 degrees.
  2. Saut onions in butter and add flour.
  3. Add milk, pepper and mustard while constantly stirring. Allow mixture to simmer and thicken.
  4. Add cheeses to the milk mixture and stir until cheese melts.
  5. Toss macaroni and cheese sauce together and mix thoroughly. Transfer to a baking dish.
  6. Bake for around half an hour until bubbly.
Cheddar and Swiss Cheesy Macaroni
Prep time: 60 minutes Servings: 6-8 Ingredients: 2 cups elbow macaroni, cooked 4 tablespoons butter 2 tablespoons all-purpose flour 2 cups milk 1/4 onion, minced Salt and pepper to taste 1/4 pound processed cheese food 1/4 pound shredded Cheddar cheese 1/4 pound shredded Swiss cheese Directions:
  1. Set oven to 350 degrees.
  2. Melt butter in a saucepan, saut onions.

    Add flour, stir until smooth and add milk. Allow mixture to boil and then set aside.

  3. Combine cheeses together in a separate bowl.
  4. Toss pasta with the milk mixture and layer a third of the mixture in a baking dish. Top with 1/3 of the cheese mixture. Repeat until you have gone through all the ingredients.
  5. Cover tightly with foil and bake for 350 degrees for 45 minutes.
2-Step Mac and Cheese
Prep time: 40 minutes Servings: Ingredients: 1 (10.75 ounce) can cream of mushroom soup 1 (8 ounce) package Cheddar, shredded 1/3 cup grated Parmesan cheese 1 cup milk 1/4 teaspoon ground black pepper 4 cups cooked macaroni pasta, cooked Directions:
  1. Combine cheeses with milk, black pepper, soup and pasta in a baking dish.
  2. Bake at 400 degrees for 20-30 minutes until bubbly.
Gourmet Style Cheesy Macaroni
Prep time: 30 minutes Servings: 4-6 Ingredients: 1 (12 ounce) package macaroni, cooked 1/4 cup butter 1/2 cup minced onion 1 1/2 tablespoons minced garlic 1/4 cup all-purpose flour 1/2 cup half-and-half cream 1 1/2 cups milk 1/2 teaspoon dry mustard powder 1 cup grated Parmesan cheese 1 (8 ounce) package cream cheese, cubed 1 cup shredded Swiss cheese 2 cups shredded Monterey Jack cheese 1/3 cup shredded sharp Cheddar cheese Salt and pepper to taste 1/2 cup bread crumbs 1/2 cup grated Parmesan cheese Directions:
  1. Set oven to 375 degrees.
  2. Saut onions in butter until fragrant and add garlic.
  3. Add flour and stir constantly.
  4. Add half-and-half and allow mixture to simmer.
  5. Add 1 cup of Parmesan cheese, cream cheese, Swiss Cheese, Monterey Jack and Cheddar. Keep stirring until mixture is smooth and thick.
  6. Add macaroni and mix thoroughly with sauce. Transfer to a baking dish.
  7. Toss crumbs and remaining parmesan cheese together in a separate bowl and sprinkle on top of the baking dish.
  8. Bake for 5-10 minutes until the top is brown and bubbly.
Quatro Formaggi Macaroni
Prep time: 40 minutes Servings: 4-6 Ingredients: 1/2 (8 ounce) package elbow macaroni, cooked 1 cup shredded sharp Cheddar cheese 1 cup shredded provolone cheese 1 cup shredded mozzarella cheese 1 cup shredded Colby-Monterey Jack cheese 1 egg, beaten 1 cup milk Directions:
  1. Set oven to 350 degrees.
  2. Grease the bottom of a baking dish and cover bottom with grated cheddar cheese.
  3. Place a layer of macaroni and top with Provolone.
  4. Place another layer of macaroni and top with Mozzarella.
  5. Place another layer of macaroni and top with Monterey Jack.
  6. Whisk milk and eggs together and pour mixture over the baking dish.
  7. Bake for 20 minutes until brown and bubbly.
Mac and Cheese with a Kick
Prep time: 40 minutes Servings: Ingredients: 1 1/2 cups macaroni pasta, cooked 4 tablespoons butter, divided 1/4 cup all-purpose flour 3 cups whole milk 1 teaspoon dry mustard 3/4 teaspoon salt 1/2 teaspoon ground white pepper 3 teaspoons hot pepper sauce 1 cup shredded pepperjack cheese 1 1/2 cups shredded sharp Cheddar cheese 1/2 cup grated Parmesan cheese 1/3 cup dry bread crumbs 2 teaspoons chili powder Directions:
  1. Set oven to 375 degrees.
  2. Combine flour and melted butter in a sauce pan while constantly stirring.
