What is Garden Candy?
G arden Candy is a collection of easy-to-follow, and budget-friendly recipes that include vegetables.
When it comes to getting (and staying) healthy, one of the easiest things you can do is add vegetables to your diet. The more you eat, the healthier you will be. Its really just that simple. Vegetables contain an abundance of vitamins, minerals, fiber and other nutrients that build healthy brains and bodies. Plus, they help fight against cancers, heart disease, diabetes, and other illnesses.
G arden Candy contains tasty ways for you to enjoy your favorite veggies, try new ones and re-visit vegetables you think you dont like by preparing them in a new way.

What Garden Candy Isnt:

- Garden Candy isnt snobby about food. Were not suggesting the food you buy has to be all organic, locally bought, or fresh from the farm. Canned and frozen vegetables are welcomed here and our recipes call for them right alongside the garden-fresh variety.
- Garden Candy is not complicated. You dont need a lot of special kitchen tools, advanced cooking skills, or hard-to-find ingredients to make these Garden Candy recipes.

Beets
You Cant Beat Beets
Sweet beets are filled with powerful nutrients to fight cancer and heart disease and their edible leafy greens have plenty of Vitamin C and calcium.
How beets grow in the garden:
Beets and Sweets
Ingredients:
6 medium beets, peeled and cut into chunks
2 tablespoons olive oil
1 teaspoon garlic powder
teaspoon salt
teaspoon ground black pepper
1 teaspoon brown sugar
a pinch of cayenne pepper
3 medium sweet potatoes, cut into chunks
1 large sweet onion, chopped
Directions:
- Preheat oven to 400.
- In a medium-sized bowl, toss the beets with tablespoon of the olive oil to coat.
- Spread in a single layer on a baking sheet.
- Bake beets for fifteen minutes.
- While the beets are cooking, mix the remaining 2 tablespoons of olive oil, garlic powder, salt, pepper, brown sugar and cayenne pepper in another bowl.
- Add the sweet potatoes and onion to the mixture and mix well until everything is combined and the potatoes are well coated.
- After baking the beets for fifteen minutes, remove beets from oven and mix sweet potato mixture with the beets on the baking sheet.
- Return pan to the oven and continue baking about 45 minutes, stirring the vegetables after 20 minutes.
- Remove from oven when all vegetables are tender.
- Serve warm.
Serves 6
Beet Soup (Borscht)
Ingredients:
8 beets
8 cups water
1 can low sodium tomato soup
1 teaspoon dill, chopped
3/4 cup low fat sour cream
Directions:
- Scrub beets well.
- Put beets in large pot with the 8 cups of water.
- Bring water to boil and then reduce to simmer and cook beets until tender (about 45 minutes.)
